Check your frozen foods aisle at your local grocer. There are a variety of options for a hot meal that any 12 year old can make in a microwave without any work.
Manicotti, spaghetti, roast beef w/ mash, fish sticks etc...
Don't recommend anything that would require them to do cutting especially if they are at home alone no matter how independent they seem.

My daughter takes lunch every day to school and sandwiches can get boring. I buy Betty Crocker Suddenly Salad pastas. They're inexpensive and sometimes they're on super sale. When they are, I buy a bunch and keep them in the pantry. Anyway, I make the pasta one evening and portion out two or three plastic containers and add some precooked diced chicken. I toss in a piece of fruit, a couple of cookies and a water and she's good to go! There's nothing to heat. Just put a little ice pack in your lunch bag and things will keep cool till lunchtime. Sometimes I'll do raw veggies and dip.

San Antonio Chicken Salad
3 boneless chicken breasts - cut into 1/2" cubes
1/2 cup picante sauce
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 cup dairy sour cream
2 tablespoons mayonnaise
1 ripe avacado
1 cup sliced celery
bibb or leaf lettuce leaves
4 crisply cooked bacon slices - crumbled
Directions:
Combine picante sauce, cumin and salt in 10" skillet.
Cook chicken in sauce mixture, stirring frequently, until cooked through, about 4 minutes.
Transfer contents of skillet to mixing bowl; cover and chill thoroughly.
To serve, combine chicken mixture, sour cream and mayonnaise; mix well.
Peel, seed and coarsely chop avacado. Add avacado and celery to chicken mixture; mix lightly.
Spoon onto lettuce-lined salad plates; sprinkle with bacon. Serve with additional picante sauce.

A 12 year old with gourmet tastes??? There are some great kid oriented cookbooks that you might want to consider purchasing for your 12 year old to use. Even though they don't want to have the familiar staples of mac and cheese, soup etc., there are tons of ingrediants that can be added to make the outcome tasty and different. Here are some ideas:
1. Mac and cheese with peas and tuna, topped with crushed potatoe chips.
2. Tuna salad with lemon pepper, capers and mayonaise
3. Chicken breasts marinated in Italian dressing and grilled.
4. Potato Leek soup using canned potato soup, sour cream, and sauteed leeks or green onions
5. Stuffed sweet potatoes: baked sweet potatoes stuffed with butter and bacon bits.
6. Turkey Italian Sausages sauteed with red bell pepper and onion served on a sourdough roll.
7. Baked potatoes topped with sour cream, butter, chives, and bacon
8. Hot dogs sliced on the diagonal, cooked with Bush's baked beans, 1 tsp mustard, 1 T brown sugar and topped with bacon. Bake at 375 degrees for 45 minutes to 1 hour uncovered or until thick and bacon is cooked.
9. Hummus with veges and pita
10. Lettuce rollups with diced chicken, carrots, bean sprouts, mint and cilantro. Make a dipping sauce out of peanut butter, brown sugar and soy sauce.

PEANUT BUTTER AND JELLY SHAPES
"CRUSTLESS SANDWICHES"
Bread 2 slices per sandwich
Peanut butter
Jelly
Cookie cutters
Spread peanut butter and jelly onto slice of bread in desired thickness. (Thin layer works best!) Top 1 slice over the layered slice. Then take cookie cutter shape and cut through sandwich. Buy bread large enough for 2 shapes per sandwich.
Great for picky crust eaters!
CHICKEN NOODLE SOUP
4 cooked chicken breasts
1 (16-oz.) pkg. egg noodles
2 carrots, chopped or sliced
3 stalks celery, sliced
2 cans Cream of Chicken soup
1/4 cup onion, chopped
salt and pepper, to taste
Cook chicken by boiling until tender. Dice the chicken and set aside.
Cook noodles according to package directions.
Boil carrots and celery until tender. Add the vegetables, chicken and cream soup to the cooked noodles. Salt and pepper to taste.
Simmer for about 15 minutes.
SUPER CORN DOGS
1 cup corn meal
1 cup flour
1 tablespoon baking powder
1/2 teaspoon salt
1 1/2 tablespoon oil
1/2 tablespoon powder curry
1 small can cream corn
1/2 cup corn starch
8 regular franks
1 slightly beaten egg
8 popsicle sticks
Be sure franks are dampened a bit but not wet. Mix all ingredients together, including egg, creamed corn, and oil. Add buttermilk a little at a time until it is at the right consistency. Almost like a cake batter). Set aside for a few minutes allowing baking powder to rise.
Place corn starch in a flat dish. Push popsicle sticks into franks and roll then in the corn starch, shake off eccess, then coat with the batter.
Heat enough oil in a pan to cook four dogs at a time. Cook to the degree of brownness you desire
BARBECUE HOT DOGS
Hot dogs
1 sm. jar currant jelly
3/4 c. mustard
Cut hot dogs into bite size pieces. Put in crock pot. Put jelly and mustard in and mix well. Cook, stirring occasionally until sauce is cooked into hot dogs.

SHIPWRECK STEW
there...it's not a soup or mac n cheese or sandwich,etc...
INGREDIENTS
2 pounds ground beef
2 (10.75 ounce) cans condensed tomato soup
2 medium onions, chopped
5 large potatoes, cubed
2 (15.25 ounce) cans kidney beans, undrained
DIRECTIONS
Crumble the ground beef into a large skillet over medium-high heat. Cook and stir until browned. Drain grease, and transfer beef to a slow cooker. Mix in the tomato soups (undiluted), onions, potatoes, and beans.
Cover, and cook on the Low setting for 4 to 5 hours, until stew is thick and potatoes are tender.
BUTTER BEAN SOUP
This is fairly easy to do...enjoy lunch!!
INGREDIENTS
4 medium red potatoes, diced with peel
1/2 onion, chopped
1 (10.75 ounce) can condensed cream of celery soup
1 cup cubed cooked ham
1 (15.5 ounce) can butter beans, drained
1/4 teaspoon ground cumin, or to taste
1/4 teaspoon ground coriander, or to taste
DIRECTIONS
Place the potatoes into a saucepan, and fill with enough water to cover. Bring to a boil, and cook until tender, about 10 minutes. Drain, leaving one inch of liquid in with the potatoes. Place over low heat, and add the onion. Simmer until onion is soft. Stir in the cream of celery soup, ham and butter beans. Season with cumin and coriander. Simmer for 5 or 10 minutes, until heated through
