It does depend on what passports you are holding. If you wife has her US passport she will need a visa to visit China and if you are in Thailand less than 30 days she will not need a visa. Since you were born in Hong Kong, if you are holding a Hong Kong passport, I would not think you need a visa to visit China and will not need a visa for Thailand if you are staying less than 30 days.
