super easy meal: de bone the chicken ( that means cut the meat off the bones) and cut into smaller pieces(bite sized) brown in a large pan with a tablespoon of garlic, add in one large can of campbels cream of chicken soup(don't add water) and simmer on low for about 15 minutes. Serve with white rice and a veggie. Feeds 3 adults, for more, add another can of soup

4 tablespoons butter
3 tablespoons honey
4 teaspoons chili powder
1 tablespoon orange juice
2 hens, halved
salt and pepper, to taste

Preheat oven to 350°.
Melt butter and stir in honey and chili powder.
mixing well.
Stir in orange juice, salt and pepper and remove from heat.
Cut each hen into two halves.
Rinse well and pat dry with paper towels.
Place hens in baking dish, skin side down, and place in oven for 6-8 minutes.
Turn hens over and baste generously with all of the mixture.
Bake for approximately 45 minutes or until well browned.

CHICKEN TETRAZZINI

1 lb. pasta, cooked
1/2 pound fresh mushrooms
1 stick butter
2/3 cup flour
1 large onion, sliced
5 cloves garlic, peeled and chopped
4 c. chicken broth
2 c. light cream
1/4 cup dry sherry
4 c. diced chicken, cooked
1 c. grated Parmesan cheese
1/3 teaspoon garlic powder
Salt and pepper to taste

Cook and drain pasta according to package directions. Slice the mushrooms 1/8 of an inch thick and sauté in 2-3 tablespoons of the butter, along with sliced onion, and chopped garlic until lightly browned. Combine the remaining butter with flour and add chicken broth, stirring over low heat until thickened. Add the cream, salt, pepper, sherry, and garlic powder.
Divide the sauce in half. And one half of the chicken meat, and half of the mushrooms and cooked pasta. Butter a casserole dish and turn the pasta mixture into the casserole leaving a well in the center of the pasta.

Turn remaining cooked chicken half into the center of the pasta mixture. Top with Parmesan cheese, and bake uncovered at 400 degrees Fahrenheit for 20 minutes.

Optional: may also top with butter to breadcrumbs and grated cheddar or American cheese.

If I were you I'd make chicken and vegetable dish... something like pot roast. If you have a microwave, par cook carrots and potatoes. Roast your chicken [you may need to baste it a couple of times w/butter or margarine. Place your vegetables around the chicken a half hr. before it is done and baste w/ pan drippings. You can use any combination of vegis for this but your tubers [potatoes, carrots, parsnips, turnips, etc. need to be partially cooked before hand.] If you have spices, I'd use rosemary and mixed pepper. Don't salt until at the table.

You can make a broth or etc. The broh should include the hen meat of course and a few veggies and other meat and spices into the pot and let it simmer and cook. or you can boil the meat and decorate a dish with meat and salad. I know it sounds stupid but I hope it helps!

soup definitely. the bones will add a good flavor to the broth and the meat will soften in the slow cooking process and wont be tough. its good trust me.
