Let's say.. Someone is really rich. He doesn't do things that cause attenton.

Can I say that he "stays low" ? (I am not sure if this is corrent)
or He is very discreet.
or how would you say it as a native speaker ?
If possible, please provide some examples.

Hi Stan, you may use "low profile" for a situation like this. To be "low profile" means to lead a quiet and unpublic-attracting life usually to fend off public attention and remain anonymous (for whatever reason,) or to just live a modest life for the sake of it. "Low profile" may be used as a noun, or as an adjective. Put a hyphen between the two words if you use it as an adjective.

Used as a noun:
Ernie landed a high-paying job, but he kept a low profile and told no one about it, not even his parents.

Used as an adjective:
The Beverly Hills millionaire John Smithson likes to keep a low-profile social life, and usually stays away from crowded places where he might be easily recognized.

You could say a few different things:
He is humble.
He is inconspicuous.
He is discreet.
He lays low.

Rather than "stays low", say, "He lays low"; another term often used is, "He is down to earth".
