Salata Baladi (Arabic fresh vegetable salad) 2 TBS extra virgin Olive oil 2 TBS lemon juice 1 romaine lettuce, torn into bite sized pieces 3 ripe tomatoes, each cut into 8 pieces 1 green pepper, cut into bite-sized pieces 1 cucumber, seeded and chopped 6 radishes, sliced 1 small salad or red onion, thinly sliced 2 TBS chopped fresh flat leaf parsley 2 TBS chopped fresh mint In a bowl whisk together the olive oil and lemon juice. Season well with salt and pepper. Combine remaining ingredients in a large serving bowl and toss well. Add the dressing and toss to combine.

Cut several regular sized tomatoes into 6-8 wedges, I use a whole vidalia sliced thinly, one seedless cucumber (I use these because I like to leave the skin on) sliced. Combine 3 Tablespoons Balsamic vinegar with 1/2 tsp pepper, 1 tsp salt, whisk until salt is dissolved. Whisk in 1/4 cup olive oil and pour over vegetables. You can let set for a few minutes to let the vegetables soak up the flavor.

The way I do that kind of salad is just toss some roughly chopped (NOT diced, not too small) sweet bell peppers (red and yellow), tomatoes, cucumbers, and a small amount of romain or baby arugula lettuce with fat free italian dressing (two tablespoons = just 15 calories!) and also some curry spice and pepper. The curry gives it a great earthy flavor. I love it, and I don't like onions raw so I only add onions when my mom (an onion fanatic) wants some. I hope that helps, you should try it! Its my fave low-cal recipe of the summer.

INGREDIENTS:
4 roma or vine ripe tomatoes
1 medium cucumber
1 chopped onion
2 tbsp balsamic vinegar
1 tsp extra-virgin olive oil
1/4 tsp sugar
2 tsp chopped fresh basil
Freshly ground black pepper to taste
PREPARATION:
Slice tomatoes and cucumber thinly and place in a medium bowl. Combine vinegar, oil and sugar. Drizzle over sliced tomatoes and cucumber. Toss, then sprinkle with chopped basil and onion. Refrigerate or serve at room temperature.

TOMATO CUCUMBER SALAD
1 cucumber, sliced
1 med. onion, sliced
1 green pepper, sliced in rings
2 med. tomatoes, cut in chunks lengthwise
Place vegetables in layers, sprinkling each layer with Mixed-Up salt or steak salt. Mix:
1/4 c. oil
1/4 c. vinegar
2 tbsp. sugar
1/2 tsp. basil
1/8 tsp. garlic salt
Combine ingredients and pour over salad. Chill. Good on hot days.

TOMATO-CUCUMBER-ONION SALAD

1 lg. mild sweet onion, sliced very thin
1 tbsp. snipped fresh dill or 1 tsp. dill weed
2 tbsp. oil
1 tbsp. white wine vinegar or lemon juice
2 tsp. sugar
1/2 tsp. salt
1/4 tsp. white pepper
Parsley
Alternate cucumber, tomato and onion slices decoratively in shallow glass serving dish. Combine remaining ingredients, except parsley. Pour over salad. Chill 2 hours before serving to allow flavors to blend. Garnish with parsley. 6 servings.

* 2 tablespoons vegetable oil
* 2 cucumbers, sliced
* 1 cup sliced red onion
* 2 ripe tomatoes, cut into wedges
DIRECTIONS
1. In a large bowl, mix the vinegar, sugar, salt, dill, pepper, and oil. Add cucumbers, onion, and tomatoes. Toss, and let stand at least 15 minutes before serving.
--------------Corn Salad
INGREDIENTS:
* 2 (12oz.) cans whole kernel corn, drained
* 3/4 cup diced cucumbers
* 1/4 cup diced onion
* 2 small tomatoes, chopped
* 1/4 cup sour cream
* 2 tbs. mayonnaise
* 1 tbs. vinegar
* 1/2 tsp. salt
* 1/4 tsp. dry mustard
* 1/4 tsp. celery salt
PREPARATION:
Combine corn, cucumbers, onions and tomatoes in salad bowl. Blend sour cream with mayonnaise. Add remaining ingredients. Add sour cream mixture to corn mixture. Toss gently to coat vegetables. Chill corn salad thoroughly.

It's *real* complicated, so pay attention!
Chopped tomatoes (can skin or not)
Chopped cukes (can peel or not)
onion slivers (so they're easy to pick out, but will flavor the salad)
Couple splashes of vinegar
salt and pepper
Combine all.
