Well, the obvious answer is that long ago fermented beverages were thought to contain spirits. Those spirits were thought to interact with you after drinking teh beverage, thusly making you happy (drunk)
In laymens terms, a spirit referrs to a distilled form of alcohol. We all know that.
An interesting twist on the "spirit" reference comes from distilleries that age thier product in oak barrells. Over the course of years, some of the alcohol in those casks will evaporate, leaving less volume than when they were origianlly filled. Distillers call this the Angel's Share.

they are distilled spirits. That is a lower alcohol liquid (such as beer, wine or cider) that had been put through a still or distilling process to boil off some of the water and increase the alcohol content. Most distilled spirits are 80 proof or 40% alcohol. Rum, vodka, whisky, tequila, etc are all spirits.
