Not that one, but this one:
1 cup flour
1 teaspoon vanilla
3 eggs
3 teaspoons baking powder
3 tablespoons sugar
1 lb. ricotta cheese
Mix all together well. Drop by tablespoons into hot oil (deep fryer or in large pot) 350°F degrees. Cook until light brown, but you may need to roll them so they cook evenly in the oil.
Roll in powdered sugar. To me, these taste like the funnel cakes found at carnivals.

Famous Mouse Pancakes honor a little mouse known and loved the world over. Serve with warmed syrup, favorite jams, melted butter and powdered sugar!
2 cups all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
2 cups buttermilk
1/2 cup milk
1/4 cup butter, melted
1/4 cup raisins
1/4 cup sliced, hulled and rinsed strawberries
In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt.
In another bowl, lightly beat the eggs, buttermilk, milk, and melted butter. Add the liquid ingredients to the dry ingredients all at once, stirring just to blend; the batter should be slightly lumpy.
Heat a lightly oiled griddle or heavy skillet over medium-high heat (375°F (190°C) on an electric griddle). Pour enough batter onto the griddle to make a normal-sized pancake (about 1/4 cup); immediately ladle 2 more tiny circles of batter so that they attach themselves to the first pancake to make mouse ears.
When bubbles cover the surface of the pancakes and their undersides are lightly browned, turn them over and cook about 2 minutes more, until the other sides are browned. Before serving, place raisins on each pancake to make the eyes and nose and a strawberry slice for the mouth.
Makes 4 servings.

INGREDIENTS
1 1/2 cups milk
1 teaspoon salt
2 tablespoons white sugar
3/8 cup shortening
2 tablespoons active dry yeast
4 cups all-purpose flour
1 quart oil for frying
3 tablespoons ground cinnamon
6 tablespoons white sugar
DIRECTIONS
In small saucepan over medium heat, combine milk, salt, 2 tablespoons sugar and shortening. Heat until shortening melts and sugar dissolves. Remove from heat and let cool to lukewarm, 110 degrees F (43 degrees C). Sprinkle in yeast and let sit until foamy.
Transfer mixture to large bowl, and stir in flour to make a dough. Knead until smooth, cover and let rise 30 minutes.
In a large heavy skillet or deep fryer, heat 1 inch of oil to 375 degrees F (190 degrees C).
Roll out 1 to 2 inch balls of dough into thin sheets. Fry sheets 1 to 2 minutes on a side, until puffed and golden. Drain on paper towels.
Combine cinnamon and 6 tablespoons sugar. Sprinkle over warm pastries. Serve

Yes, there are a several that move me to tears. I went to my first concert in 1972 to see YES and The Eagles (original line-up) opened the show for them. They were brand new on the scene and had their first hit, Take It Easy. It was most memorable! I remember when New Kid in Town was released. The morning DJ on my favorite NY classic rock station, WNEW, played it twice, he liked it so much. I'm showing my age, aren't I?
