My favorite hummus recipe is:
one can garbanzo beans (don't dump the liquids!)
2 cloves garlic roughly chopped
3 tbsps chopped onion
1 jalapeno (I start with half, and then add as needed)
a dash of salt
3 tbsp of extra virgin olive oil
Put everything in a blender, give it a whirl, and if it is too thick, add the liquids from the beans or more extra virgin olive oil until you get it to a consistency you like. Usually, hummus has tahini paste in it, but sometimes I have a hard time finding it. I like to eat it with toasted pita chipes, celery and carrot sticks, and sometimes in an odd mood, pretzels.

Curried Hummus
INGREDIENTS
2 (15.5 ounce) cans chick peas (garbanzo beans), rinsed and drained
2 tablespoons olive oil
3 garlic cloves, crushed
4 teaspoons curry powder
6 tablespoons fresh lemon juice
1/2 cup water
Salt, to taste
Hot sauce, to taste
DIRECTIONS
Put all ingredients in a food processor and blend until smooth. Serve (drizzled with olive oil, if desired) with pita chips.
Easy Roasted Red Pepper Hummus
INGREDIENTS
2 cloves garlic, minced
1 (15 ounce) can garbanzo beans, drained
1/3 cup tahini
1/3 cup lemon juice
1/2 cup roasted red peppers
1/4 teaspoon dried basil
DIRECTIONS
In an electric food processor, combine garlic, garbanzo beans, tahini, and lemon juice. Process until the mixture is smooth. Add roasted peppers and basil; process until the peppers are finely chopped. Season with salt and pepper. Transfer hummus to small bowl, cover and chill until you are ready to serve.

Any authentic recipe should be dairy free and should look something like this chick peas tahini paste cumin olive oil garlic powder that is what is normally in hummus. i can't give you the amounts but those are the normal ingredients.

It's easy.
Get a blender and some pinenuts, lemon juice, fresh garlic, and olive oil. Put it all together and blend into hummus.

Actually we Arabs as well as indians, traditionally use hummus as a dip for roti, chappathi, khubooz etc. These are different types of bread actually, and u can buy them from any indian restaurant.

1 can chick peas - drain well
1 lemon - juice & some peel
salt & pepper & parsley
1 sm shallot & as much garlic as you like
olive oil
*** pan roast the garlic & shallots in olive oil first also you can roast then in the oven wrapped in aluminun foil
*** add all the ingredients to a food processor and let it run then add some olive oil until it becomes a smooth paste
*** some times I like adding some sun dried tomatoes & tahini sauce

INGREDIENTS
* 2 cups canned garbanzo beans, drained
* 1/3 cup tahini
* 1/4 cup lemon juice
* 1 teaspoon salt
* 2 cloves garlic, halved
* 1 tablespoon olive oil
* 1 pinch paprika
* 1 teaspoon minced fresh parsley
DIRECTIONS
1. Place the garbanzo beans, tahini, lemon juice, salt and garlic in a blender or food processor. Blend until smooth. Transfer mixture to a serving bowl.
2. Drizzle olive oil over the garbanzo bean mixture. Sprinkle with paprika and parsley.

* 1 clove garlic
* 1 (19 ounce) can garbanzo beans, half the liquid reserved
* 4 tablespoons lemon juice
* 2 tablespoons tahini
* 1 clove garlic, chopped
* 1 teaspoon salt
* black pepper to taste
* 2 tablespoons olive oil
DIRECTIONS
1. In a blender, chop the garlic. Pour garbanzo beans into blender, reserving about a tablespoon for garnish. Place lemon juice, tahini, chopped garlic and salt in blender. Blend until creamy and well mixed.
2. Transfer the mixture to a medium serving bowl. Sprinkle with pepper and pour olive oil over the top. Garnish with reserved garbanzo beans.
----------------- Creamy Yogurt Hummus
INGREDIENTS
* 1 (15.5 ounce) can garbanzo beans, drained
* 1 clove garlic, peeled
* 1 teaspoon salt
* 1/2 cup fresh lemon juice
* 2/3 cup plain non-fat yogurt
DIRECTIONS
1. In a blender or food processor, blend garbanzo beans until smooth. Mix in garlic, salt, lemon juice and yogurt. Blend to desired consistency.

1 (16-ounce) can black beans, drained
1 tablespoon tahini, optional
3 tablespoons pure Spanish olive oil
1 lime, juiced
2 cloves garlic, crushed in a mortar
salt and freshly ground black pepper to taste
1 teaspoon ground cumin
Directions:
In a food processor fitted with a steel blade, combine all the ingredients and process until smooth. Cover and refrigerate until ready to use. Bring to room temperature before serving. It will keep in the refrigerator for one week.
This recipe for Black Bean Hummus serves/makes 1.5 cups
---------------Cilantro Jalapeno Hummus Recipe
Ingredients:
2 cloves garlic

3/4 cup chopped fresh cilantro
2 jalapeno peppers, seeded and minced
Directions:
Place garlic in a food processor and process until minced, about 10 seconds. Add beans, lime juice and salt. Process into a puree. With the processor running, slowly add olive oil in a steady stream through the feed tube. Process until mixture thickens, about 1-2 minutes. Add cilantro and jalapeno and pulse throughout, about 10 seconds. Store in an airtight container in the refrigerator. Bring to room temperature before serving.
This recipe for Cilantro Jalapeno Hummus serves/makes 2 cups
