try adding some of that powdered ranch dressing mix!!! it gives veggies a real KICK!

Fry them.
Seriously. Instead of boiling them and using sauces, blanch them - cut them up into mouthful-sized pieces, pop them into boiling water for five minutes and then cool them down under the cold tap or in iced water if you happen to have any available (I never do) - and then fry them in the saucepan you cooked them in, with a good glug of olive oil, chopped garlic and crumbled dried chili. This is the best way of serving broccoli and cauliflower I've ever come across, especially if you squeeze a lemon over them while they're frying. Low calorie (make sure the olive oil is extra virgin, which is the only cooking fat that's actually good for you) and great with pasta, if you like pasta.
If you want an asian kick, blanch them then fry them in peanut oil with a little chopped garlic and chopped ginger, then add a generous splash of soya sauce and serve with buckwheat noodles. You could toast some cashews and sprinkle them over the top for the hell of it, as well as for the protein. Throw in a sprinkle of sesame oil, a few chopped spring onions and some finely grated raw carrot (or even daikon if you want to make a trip to your local Far Eastern supermarket) and you've got dinner right there.

Parsley Potatoes. Calories: 134
INGREDIENTS
1 1/2 pounds new red potatoes
1 tablespoon vegetable oil
1 onion, chopped
1 clove garlic, crushed
1 cup chicken broth
1 cup chopped fresh parsley
1/2 teaspoon ground black pepper
DIRECTIONS
Peel a strip of skin from around the center of each potato, place the potatoes in cold water. Set aside.
Heat oil in a large skillet over medium high heat. Saute onion and garlic for 5 minutes or until tender. Pour in broth and 3/4 cup of the parsley; mix well. Bring to a boil.
Place the potatoes into a large pot full of salted water. Bring the water to a boil; then reduce heat. Simmer covered, for 10 minutes or until the potatoes are tender.
Remove potatoes with a slotted spoon to a serving bowl. Sprinkle the black pepper into the skillet and stir.. Pour the peppered sauce over potatoes and sprinkle with remaining parsley.

A squirt of lemon juice tossed with fresh herbs is always a tasty way to go. Lime and cilantro is also good, orange juice and basil is also yummy. A tbsp of super finely chopped nuts isn't very low-cal, but gives good crunch and usually has some great health benefits to balance the added calories.

How about a stir fry!
You can put lots of veg in a wok,including your broccoli
Soy sauce
Five spice powder, 1 tsp from any supermarket
and some noodles to add bulk. Really yummy
or
How about mixed veg like peppers,
red onions in large chunks,
mushrooms,
courgettes,
cherry tomatoes,
a little olive oil
garlic and mixed herbs done in the wok or roasted in the oven.

Adding minced garlic to any cooked veggie makes it great. Also, "I Can't Believe Its Not Butter", makes a very low calorie butter flavored spray that is great on veggies. It think its less than a calorie per spray. You don't need much.

use a small amount of low fat soy sauce and put the veggies and the oy sauce in a pan and let it simmer for abut 5 min

I like to take the Italian brand dressing and use olive oil instead of regular oil, marinate the veggies in it for an hour and then grill them, yummy!

As a fan of vegetables myself, I usually make Mediterranean style salads/cold dishes. Boil vegetable until al dente (not too mushy, not too raw, but with a slight crunch), drain in cold water add olive oil (extra virgin is better), lemon juice & garlic.

Roasting them with spray oil; crushed garlic; rosemary and thyme. One of my fav meals as you can use practically any vegetable you have lying around (even broccoli and cauliflower)

You could make a vegetable curry up or roast parsnips, potatoes, carrots, peppers and onions and serve with some pasta or Quorn sausages.
