"souls, god, apparitions," Zeus, leprechans, pink unicorns...
You know, I'm an atheist. I have no idea why some people don't have a hard enough time accepting those things.

You present a "tired old question", you deserve a "tired old answer". Your assumption is not true. We don't see electricity but we can make it do things can't we? Can you make any of your "imaginary" souls, god or apparitions do anything?

Because you are born with instinct and the come in as 5 senses the sense of smell, touch, sight, hear, and taste. You use these senses or instincts to live life everyday most of them without even noticing. Souls, god, ghosts and so on are all stories told to you by other people you can't smell, touch, see, hear, or taste any of them. Your instincts tell you not to believe in these things that you can't see or touch, smell, hear or taste. It is human nature not to believe in something like god. Uneducated humans invented him to explain things that they couldn't. That is why the number one rule about god is not to question or test him......because he will fail.

unicorns, orcs, goblins, gnomes, elves, pixies, dragons, little green men...
How can you tell that something exists with no evidence whatsoever?
You disbelieve thousands of gods; the only one you think is real is the one your parents told you was real. Why do you have a hard time "excepting" all of them?
"muslim rose" :
We cannot see the wind but we can hear it, measure it, analyze it, predict it, and create it. Why are you comparing an actual phenomenon to a fictional character?

accept- I accept your gift.
except- I like all flavors of ice cream except spumoni.
Yes, why the hell would people have a hard time believing what appears to not exist. Did you really need to ask that?

Because I'd like to know what's really causing the things around me to happen, rather than accepting old mythologies and folklore. Sorry.
And the air is observable, as well as testable.

i dont think that this is true.
most people accept (the statement) that the earth has the form of a ball , although most persons did not see that.
and this is just one example , there are many many more things that cant be seen and are accepted by most people.

because for many , they need proof
they dont have an " I believe " switch they can just turn on
and thats cool
even as someone who does believe in such things , I like some validation also
some people just dont get that validation
why should they believe ?

Because its time that people stopped being mired in their superstition. Its time to grow up. Its called "logic and education".
