What can I make with thinly sliced boneless, skinless chicken, mexican cheese mix, 1/2 red onion, and 1/2 tomato? Is there something that can easily be made with the George Foreman grill, or in a fry pan on the stove? I need some new ideas since I'm pretty new to cooking.

You don't say how many your cooking for or if there is anything else available, but I'd probably do one of two things: 1) Cook the chicken with the onion in a skillet (add some oil or butter first), then add tomato (diced) and cover with the cheese...........2) if you have any tortillas, you could make chicken tacos. Cook and shred the chicken, dice the onion and tomato and add cheese.

Dice up the tomato and onion and put them in the cheese mix, cook up the chicken breast and put the sauce on top.
I would do the chicken in a stove top skillet with some olive oil and garlic is you have any, or whatever seasonings you have. Make a side of rice, if you have it. You could always dice the chicken up and then add the sauce and serve that over rice.
I know you didn't list any other ingredients you have but if you have tortillas you could eat the chicken on them with the sauce.

Saute the Chicken and onion on a bit of Olive oil. Add 2 tbsp of lemon, chicken bullion or salt and pepper. After 5 minutes, add 5 tbsp of water. Boil and remove from heat.
Cook some spaghetti or other light weight pasta. Pour the past on a baking dish. Cover with chicken and the juice. Cover the chicken with tomatoes and the cheese mix. Bake 375 for about 15 minutes.

I think that sounds like the makings for a good sandwich.
Season your chicken, brush with oil(or spray) and place on grill.
Cook for about 5mins then top with onion slices and cook a few min. longer. Top with tomato slice and cook for about 1 more min.
Place on buttered bread, top with cheese and grill till golden(about a min)
enjoy!
