Coffee bean DO lose their flavor after a few weeks. Try to keep them in an airtight container. DO NOT EVER put them in the fridge or freezer as this actually ruins the bean. Assuming you're buying quality coffee beans, there's actually moisture inside the bean. By putting them in the freezer or fridge, it causes the moisture to evaporate. Lastly, if you've had coffee beans for more than a month and a half, toss 'em. Unless you have a garden. In which case, coffee grounds are good for the soil in a garden.

No, they don't spoil like cottage cheese or vegetables. They do lose their strength and aroma after sitting around for quite awhile and make a poor cup of coffee. I store my whole beans in an airtight hermetic type jar in the freezer and then grind about a measuring cup at a time for everyday use which I keep in airtight container in the fridge.
