Creamy Chicken and Noodles
Prep: 10 min., Cook: 15 min.
1 (0.6-oz.) envelope Italian dressing mix
1 (8-oz.) package wide egg noodles
2 tablespoons butter, softened
3 cups chopped cooked chicken
1 cup whipping cream (can use half & half or evap. milk to save calories)
1/4 cup freshly grated Parmesan cheese
2 tablespoons chopped fresh parsley
1. Remove 1 Tbsp. Italian dressing mix from envelope, and set aside; reserve remaining mix for another use.
2. Cook noodles according to package directions; drain well, and return noodles to pan.
3. Stir in 2 Tbsp. butter, and toss to coat. Stir in chopped chicken, next 3 ingredients, and 1 Tbsp. dressing mix. Cook mixture over medium-high heat, tossing to coat evenly, 5 minutes or until thoroughly heated. Serve immediately.
Yield: Makes 6 servings
VARIATIONS:
1. Chopped Ham and Peas: Stir in 8 oz. diced ham and 1 cup thawed frozen peas.
2. Southwestern Style: Omit Italian dressing and Parmesan cheese. Stir in 1 (10-oz.) can diced tomatoes and green chiles and 1⁄2 cup (2 oz.) shredded Mexican four-cheese blend.
3. Italian Style: Add 1⁄4 cup diced sun-dried tomatoes and 1 cup turkey pepperoni slices.

Tuscan Garlic Chicken
3 lbs Boneless, skinless chicken breasts
1½ cups Flour, plus 1 tablespoon
1 Tbsp Salt
2 tsp Black pepper
2 tsp Italian herb seasoning
1 lb Penne pasta, cooked
1 Tbsp Garlic, chopped
1 Red pepper, julienne cut
½ cup White wine
½ lb Whole leaf spinach, stemmed
12 oz Heavy cream
1 cup Parmesan cheese, grated
Preparing the Chicken:
- Combine 1½ cups flour, salt, black pepper and Italian herb seasoning in a shallow dish.
- Dredge chicken in the mixture, shaking off any excess.
- Saute the chicken in batches, in a large, nonstick, ovenproof skillet - with enough oil to coat - over medium-high heat for about two to three minutes on each side, or until golden brown and crisp.
- When finished, transfer the ovenproof skillet to a preheated oven at 350ºF. Cook for approximately 15 minutes or until cooked through and the internal temperature reaches 165ºF.
Preparing the Sauce:
- While the pasta is cooking, heat 1/2 to 1 fluid ounce of oil in a sauce pan. Add the garlic and the red pepper and cook for approximately one minute.
- Slowly add remaining one tablespoon of flour and stir to combine.
- Next add the white wine and bring to a boil for about one minute. Add the spinach and the cream and bring to a boil. The sauce is done cooking when the spinach becomes wilted. Complete by stirring in the parmesan cheese.
Assembling Entree:
- Partly coat the pasta with the sauce, transfer to a large bowl (or individual dishes) and then top with the chicken, the remaining sauce and extra parmesan cheese. Serve and enjoy.

Cheesy Garlic Butter Chicken
First of all, I'm horrible at pounding chicken breasts, so I filet them instead, so I get 2 thin pieces out of each breast half.
Then, spread Rondele or Alouette Garlic and Herb cheese spread (calories!!!) on each piece and roll them up. Sometimes you have to use a toothpick to keep them from unrolling. Then, roll each piece in a mixture of egg and milk. Then roll them in seasoned bread crumbs. Put them in a baking dish that's been sprayed with Pam. Melt 1-2 sticks of margarine in a bowl. Stir in a bunch of minced garlic (I think I use a couple of tablespoons!). Pour the margarine mixture over the chicken and bake uncovered, at 375 for an hour. Do not turn them over during the baking! The recipe called for 45 mins, but we like to make sure our chicken is really done!

My favorite recipie is 2 boneless chicken brest per person. I use 4 1 cup of bulls eye BBQ sauce (you can get it at walmart) 1/4 cup of worchestershire sauce 1/4 cup of veg oil 1/4 tsp garlic powder a pinch of parsley *MIX ALL TOGETHER* you won't beable to mix into a complete paste due to the oil but try yourbest. Let the chicken marinate for about an hour or longer if you like Pre heat overn to 350 and bake for 45 mins in a glass dish. Don't forget to butter or PAM the dish. (I have done this lol.) When there is about 15 mins left I throw on some shredded cheese. It goes best with mashed potatoes and green beans. Hope all goes well for you. This is a easy recipie, it was the first meal I ever cooked on my own.

Brown the chicken in a skillet.
Then transfer it to a baking dish.
Sprinkle it with garlic.
Cut up the potatoes and put them on top and around the chicken.
Put Ranch dressing over it all.
Cover it with a lid or aluminum foil.
Bake it in the oven till the potatoes and chicken are done, should take about 45 min. at 350 deg.
I've never tried this, but I would, let me know how it turns out.

Marinate the chicken breasts in Italian Dressing.
Then grill them.
With the potatoes - slice them into small wedges and drizzle with olive oil, as you toss them in minced garlic, salt and pepper and roast them in the oven for 15-20 min. til golden at 425 degrees and serve them with ranch dressing for dipping.
If you'd rather have mashed potatoes instead, peel, cut, boil and mash them, but instead of using butter and milk to make mashed potatoes, pour in some ranch dressing and whip them ... very tasty!

Forget the food, stand the Italian on the table and watch him as he's dressing - I understand that they're both quick and easy, it'll keep your mind off the food and you may get some decent meat anyway.

how about grilled chicken breast with bbq sauce, then on the side have mashed garlic potatoes and pick a vegetable
or make a grilled chicken salad with lettuce dressing and grilled chicken
