I love this side dish. It's curried basmati rice. In a 2 qt saucpot heat up about 1 tbsp olive oil. Add a big spoonful of minced garlic and minced ginger. Stir for a minute or so. Add 1 cup basmati rice and stir well to coat, about a minute. Add 1 Tbsp. curry powder and stir well for a minute. Add 2 cups chicken broth, stir well, bring to a simmer and slap a lid on it for 20 minutes.
About 5 minutes before it's done you can toss in a handful of frozen peas and/or baby shrimp. When it's done toss on some chopped green onions and cilantro.
It takes less than half an hour and it's really really good.

Couscous with grilled vegetables mixed in (I use orange bell pepper, eggplant and zuchinni) and oven roasted asparagus, cooked in a very hot oven, just until tender/crisp. This combination keeps with lightness of the sole and creates a visually pleasing plate. Couscous is light and fresh tasting, a nice change from heavy potatoes or boring plain rice. GARLIC BAKED SQUASH
2 lbs winter squash
2 tablespoons flour
1 tablespoon oil
7-8 garlic cloves, chopped
2 tablespoons fresh parsley, chopped
Salt and pepper to taste
Preheat oven to 325F.
Wash and peel the squash and cut into bite sized pieces. You can use acorn, butternut, or hubbard squash or similar winter squash varieties.
Coat the squash cubes with flour that has been seasoned lightly with salt and pepper.
Grease a casserole dish with oil or vegetable spray.
Put the squash into the pan, and top with garlic and parsley.
Season with salt and pepper.
Bake for 60 to 80 minutes, or just until squash is tender.

Sauteed spinach and mushroom with a little bit of butter and soy sauce. Since you have cream sauce, you don't wnat something heavy like mashed potato. So go with the veggies.

As you may have seen from my previous posts, I am a HUGE mac and cheese fan, and this side dish is appropriate with any entree. Pick up one of the gourmet varieties such as, five cheeses or alfredo blend. Bon apetit!
