The local deli makes a great salad and when I asked how they thin the mayo they said they soak the pasta for 2 days in a brine that has very little sugar in it. I found one recipe online but it calls for 3 cups of sugar which is way to much for my diabetic husband!

Soaking macaroni in a brine for a day doesn't add up. You usually brine poultry or meat to obtain flavor, but macaroni? No! Probably what you are thinking is that a macaroni salad that's homemade must sit for a few hours for the flavors to meld. Here's one of my favorite recipes:

1 box Rigatoni pasta, made according to directions and cooled.
1 chub hard salami, cut into cubes
1 red bell pepper, diced
1 4 oz package feta cheese
1 bunch green onion, chopped
1 can sliced black olives
1 bottle Berensteins Cheese Fantastico salad dressing

Mix the above ingrediants and let sit overnight (or at least 8 hours) before serving. Toss before serving.

AMAZING MACARONI SALAD

1 package elbow noodles
3 roma tomatoes
1 small purple onion
1/4 cup sweet relish
1 small can chopped/sliced olives
6 hard boiled eggs
3/4 cup mayonnaise
1/4 cup mustard
salt and pepper

Boil noodles until soft, drain, rinse let cool in refrigerator, while cutting everything else. Dice tomatoes cut onions finely cut eggs (like making deviled egg sandwich) then mix together all ingredients at or leave out whatever you want to liking!
Best if made day before.
