Homemade mac and cheese
boil elbow mac noodles (big ones) then in a baking dish add noodles, cubbed velveta and medium chedder cheese and 1/2 cup of evaperated milk and one egg ...season with salt and pepper and you can sprinkle the top with paprika (for looks) bake 30 mins or untill all cheese is melted.
Homemade french fries are really good
rice dressing
sweet potatoe casserole
cornbread (or mexican cornbread)
coleslaw (I buy mine at a local deli already made)
Sweetpea salad
one can sweetpeas, one boiled egg chopped, little bit of mayo.
Baked potatoes and a salad
pasta salad
dinner rolls
corn on the cobb (or corn cassarole.. goggle it it's really good)

Cheddar Cornbread
************************
1 cup of flour
1 cup of yellow cornmeal
3 tablespoons of sugar
1 teaspoon of soda
1/4 teaspoon of salt
1 1/2 cups of buttermilk
2 eggs
1 cup of grated cheddar cheese (4 oz)

2 tablespoons of butter
oven: 425
9" skillet or an 8" square pan
dir: add buttermilk and the eggs to the dry ingredients then add the cheese
melt the 2 tablespoons of butter in the skillet which you put into the oven...or do the same in the square pan ...tip the pan (whichever you are using) so the inside surface is buttered and then pour the extra into your batter and incorporate it ...
pour the batter into the hot pan, bake it 20 to 25 minutes ..
cool 15
serve
wrap extras, will store 1 day
you could add chillies or some other things like onion, or olives...

oil, s&p, and a little sliced red onion

if you do not wish to make cornbread, you could serve a rough peasant bread and fresh butter ...

Potato salad, green salad ... and something with fresh summer fruits and ice cream for dessert. If you don't like 'regular' potato salad' you can try making it with 'tiny yellow potatoes' instead of the much larger russets, and sour cream, horseradish, and chinese mustard ... with or without boiled eggs. Add some 'minced' fresh celery and some minced jicama ... it's very 'different' and you may like it better ... jicama is a 'fruit' that you eat the 'root' of ... it's sort of 'sweet' like someone bred an apple with a potato and would go really well with your 'non-potato salad' potato salad.

OMG, seriously?? You have to have mashed potatoes and homemade cream gravy (with all the yummy browned "crunchies" from the pan) with fried chicken! :) As for a vegetable--hrm. Maybe some nice homemade green beans (cooked with a ham hock, of course).

I personally like mashed potatoes and mixed squash (yellow and zucchini). I'll also serve a biscuit or cornbread with it. Corn on the cob is excellent too (if it's in season). Good luck with your meal!
