OK well here goes, ..I think that a risotto (a fancy type of rice or a different flavour of rice) will be good. There are lots of diff types of risottos but i think the chicken and pepper risotto sounds good so here are the instructions and i have tried it when i made it for my auntie and it is GREAT, also i have put in some other recipes for dessert etc..
Preparation time 30 mins to 1 hour
Cooking time 10 to 30 mins
Ingredients
350g/12oz Italian easy cook long grain rice
2 medium breasts of chicken
2 whole yellow peppers
1 whole red pepper
2 lemons
8 tbsp Italian extra virgin olive oil
flatleaf parsley, chopped
lettuce leave
handful walnuts
salt and freshly ground pepper to taste
Method
1. Boil the rice and allow to cool.
2. Grill the chicken on each side until cooked and allow to cool. Slice into ½cm/¼in strips.
3. Roast the peppers in the oven for approximately 20 minutes. Once cooled, peel the skin, take out the seeds and slice them into strips of approximately ½cm/¼in each.
4. In a large bowl mix the chicken and peppers together. Add the walnuts and salt and pepper to taste. Squeeze the two whole lemons and extra virgin and stir well. Lastly add the rice and allow to rest for 5 minutes before serving.
5. Place a large lettuce leaf on a plate and add the risotto mixture in the middle, decorate with some parsley. Serve immediately.

Sticky Toffee Pudding
Ingredients
350g/12¼oz dates
300ml/10½fl oz boiling water
100g/3½oz butter
300g/10½oz brown sugar
3 eggs
400g/14¼oz self-raising flour
½ tsp bicarbonate of soda
pouring cream, to serve
For the hazelnut sauce
600ml/21¼fl oz cream
250g/8¾oz brown sugar
100g/3½oz butter
30g/1¼oz hazelnuts
For this recipe you will need
large mixing bowl
whisk
blender
baking tin 30 X 6cm (12 x 2½in)
Method
1. Place the dates in a saucepan and cover with boiling water over a low heat.
2. Leave to simmer for 15 minutes or until the dates are soft. Drain and transfer to a blender and blend until the dates are of a smooth consistency.
3. In a large mixing bowl, whisk the butter and sugar, then one by one add the eggs. Mix in the date mixture. Sift together the flour and bicarbonate of soda, and fold in, mixing well.
4. Grease the baking tin and line with greaseproof paper. Pour in the mixture and bake for 60 minutes at 165C/330F/Gas 2.
5. While the sponge is baking, make the sauce. Pour half the cream, brown sugar and butter into a heavy-bottomed saucepan and bring to the boil, stirring frequently.
7. When the sauce reaches a golden colour, stir in the remaining cream and half the hazelnuts.
8. When the sponge is cooked, remove from the baking tin, onto a serving dish.
9. Pour over the hot toffee and hazelnut sauce and sprinkle the remaining hazelnuts on top. Serve with pouring cream.

its Lemon Cheesecake
This is a very refreshing dessert for this time of year when you're eating lots of rich meals.
Ingredients
For the cheesecake mix:
1 lemon, juice and zest
2 digestive biscuits
255g/9oz mascarpone cheese
15g/½oz butter, softened
110g/4oz caster sugar
1 tbsp icing sugar
1 tsp clear honey
mint, to garnish
For the sauce:
½ bag frozen fruits, defrosted
icing sugar, to taste
Method
1. Crush the biscuits into small pieces and combine with the butter and honey. Place this mixture into one small metal ring and press the mix evenly on the bottom of the mould.
2. Add the lemon juice and zest and caster sugar to the cheese, being sure not to mix it too much as this will cause the mix to split.
3. Spoon the mix into the ring and using a palette knife press the mix well into the moulds to prevent air gaps. Remove the ring with a hot cloth or blowtorch.
4. Blend most of the fruits with some icing sugar (to taste) and pass through a sieve
5. Place the cheesecake on to a plate and decorate the top with the sprigs of fresh mint and spoon the sauce around the side and decorate with the remaining berries.

In a bamboo steamer over a wok steam some white fish, haddock or cod are a good choice. Before you start steaming it you need to grate some Ginger and lemongrass and put some finely chopped spring onions. When the fish is almost ready remove it from the steam and plate( make sure it doesn't go too cold). In a separate pan or wok heat some ground nut oil, some light soy and some sesame oil together until the mix starts to smoke, then pour sparingly over the fish. The heat from the oil will finish cooking the fish and it tastes lovely. good luck.

get some cornish game hens and roast them. it is very nice to present a whole, little bird on a plate. I also suggest asparagus, roasted rosemary seasoned boiling potatoes (its real impressive if you use red, purple, and regular potatos), and an arugala/spinach salad with crumbled fried pruscuitto. if you like the idea and need an actual recipe, cooks.com and foodnetwork.com are great resources, or you can send me a message :)

i agree with the just find a recipe and go to town on it.
maybe a nice piece of fish grilled and seasoned well. new potatoes on the side. with a salad.
simple is sometimes better.
i recommend the campbells soup recipe book if you are just starting out or looking for easy recipes to follow. hit up yard sales, flea markets, swap meets, thrift stores... they are good for finding 2nd hand books.... library has tonnnnsss free to borrow.

not sure if it will impress her or not but this one is fairly easy.
homemade chicken fried rice
dice up chicken breasts or tenders and fry over medium heat with soy sauce and then boil white rice
( i buy the boil in bag rice that comes in boxes you can buy the bags of rice it makes no difference)
when chicken is thourghly cooked add your rice to it and then a can of mixed veggies and mix together let rice and veggies cook a few minutes stiring constantly and then serve.

soak green gram in water for 5 hours. boil this along with rice and coconut milk.add seasoning and serve

I could , but I won't, that's why there are "books". You know, those paper things bound on one end. Get a "cook book", find something you think your Mom might like, that you can fix with stuff on hand , and go for it.
