This recipe is absolutely delicious. Sometimes I fix the
hashbrowns by themselves as a side dish for supper.
Hashbrown Potato/Sausage Casserole
1 pound Brown & Serve link sausages (I prefer maple flavor)
2 pounds. frozen hashbrowns potatoes, thawed
10 oz pkg cheddar cheese, grated
8 oz. sourcream
1 can cream of celery
1 tsp. salt
1 tsp. pepper
1/2 stick butter, melted
Brown sausage, and set aside. Mix all other ingredients together. Put in greased casserole. Bake at 350' for 45 minutes. Remove from oven, and place sausage on top. Cook for another 15 minutes. You can also use lil smokies or beef smoked sausage or kielbasa pieces instead of link sausages.

to feed about 10 people?
1 pound sausage fried with 1 med chopped onion - drain
1 pound shredded hashbrowns fried crisp (or tater tots)
1 doz eggs scrambled but left moist - salt/pepper to taste
mix all together in a 9x14 cake pan
top with shredded cheese and bake 350 until cheese is melted (25 mins).
sausage and hashbrowns can be cooked the night before.
i used to take this to breakfast pitch-ins all the time!

heat a griddle or frying pan to medium heat
( spray real good with no stick spray)
in a medium bowl beat 4 eggs
take 5-10 pieces of white bread and cut in half or use french bread slices
dip in to egg just lightly covered and then on to the griddle or frying pan and cook a minute or two on each side and you got french toast!

just kiding, it really depends on how much your cooking. if if's just for me then take 3 eggs 2 slices of chesse 3 srtipes of bacon 1/4 cop of milk and half a potato. cook the bacon until it's done. when doing that chop the potato in to cubes and braek the chess in to small squares then mix the eggs milke and chesse together(scrambbled). take the bacon off and frie the potato in the gress ontil light brown. when done then cook the eggs. it all goes well with a big glass of juice

ham and cheese and use two plain waffles as the bread. sounds gross i know but then i tried it and it was so good. you can even try to put an egg on it for a breakfast sandwich. i'm sure it will taste just as good!
