can it be used for cooking as a vegetable?

Pretty much none. Like a cucumber which I think it resembles in flavor. The most common use is for sweet pickles. All of the watermelon pikles I have had are too sweet for me but I had it in a mixed dill relish and couldn't tell the difference. I have seen it cooked on one of the food shows just steamed.
