What Temperature to you have the Oven set to ? It shouldn't be more then 350 Degrees.

Are you letting the potatoes cool before adding the cream? You should be.

Does it seem like it is drying out in the Oven or after you take it out? If it is inside then try covering it with aluminum foil until the egg mixture sets.

Ive got know idea what your doing wrong,but heres an easy one,You need potatoes,1 onion 1 tub fresh cream,grated cheese,fresh garlic,1 spring onion, bacon.Slice spuds,onions+ bacon,crush garlic.=add garlic,onions + bacon to cream (300ml) give it a good stir, line your oven tray with spuds,then spoon some of the cream etc. on top of spuds,then repeat until everything is used up.Top it off with grated cheese put in oven at 180 and cook for about an hour.Hope this helps.
