Today I had a full-court press interview with pretty much everyone in a company I'm looking at. The CEO, CMO, CFO all started with me, then I was passed on to a 4-person peer-level panel, then I made a presentation attended by these 7 plus an additional 7 or 8 others to whom I was never introduced.

So to whom do I write my thank you?

The CEO, CMO, and CFO. Mention how much you enjoyed meeting with xx, xx, xx, and xx, (even using first names only) and tell them again the salient points you made - or wish you'd made - during your interview. BUT keep it short and sweet.

You write the thank-you to the person who invited you to the interview. If it was the CEO's secretary, then you address the thank you to the CEO.

In the letter, you would express thanks for having the opportunity to meet so and so, and you better remember the names of the top players!!

Then you would reiterate the key points of the interview and express your interest in the position once again. Now that the interview is over, you have a clearer sense of what they are looking for and how you can make a solid contribution..

That's a little tough, but I think I would send it to the person who holds the most senior position. Guess that would be the CEO. If favorably impressed, I think he is more apt to pass it, and his impressions, down the line whereas someone in a lower position might be less likely to pass your letter up the line.
