Taking the low cost or free courses as you describe is a great way to be introduced to tax preparation. You may decide to work for one of the tax prep places after you take their course. You will get some good experience that way, and this may be the level of participation that you want.
Or, you can go onward from there if you want, taking more courses, or deciding to get an accounting degree, or taking the enrolled agent exam. There are lots of people who got into the tax business doing what you are considering.

If you want a career in tax return preparation, then I'm sure any of the three classes you listed will offer you that. I have done VITA training, and I think it's great for teaching you the basics of individual returns.
However, if you want a career in tax planning and more in-depth tax issues, you will need an undergraduate accounting degree and most likely a master's degree in taxation. Those are the classes that will allow you to explore tax and the Internal Revenue Code in depth. Also, depending on the state that you live in, those degrees will give you the necessary credit requirements to sit for the CPA exam.

If by a career in taxes you mean working for one of the organizations you list each tax season preparing fairly basic returns, then their classes would be the way to go. If you mean you want to be an actual accountant, then you'd need a college accounting degree.

I took the H&R block course years ago. I think it (or one similar) is the best way to learn to do taxes. We often send new employees (including cpas) to this course. Your career will be seasonal, as there often isn't much work from April 15-Jan 15.

Well a CAREER in taxes would entail getting a professional accounting designation, such as a CPA, or being a lawyer who specializes in taxtion issues.
A H+R block course gives you some fundamentals on income tax preparation, and the courses are quite good, but do not give your enough credentials to have a Career dealing with tax issues
