I want to have like a pizza-ish type bread, but not flour or wheat. I would like something whole grain but meh...or even something that isn't round.

I'm trying to make this:
-some sort of breading as the base
-top that off with refried beans or pinto (maybe mushed up)
-jalepenos
-grilled shredded chicken or skirt steak
-topped off with some nice guacomole.

Any ideas on the bread type, or what I should use, would be great.

I'm thinking that you're talking about polenta as a base. Top it off with vegetarian refried black beans, steak or shredded chicken, shredded cheese, and pico de gallo.
