I want to bake a cake, and we have no milk. Or money to go buy milk. lol, we're students, just wanting something to do this evening. We want to make a cake from scratch and we are wondering if there is anything we could use instead of milk.

Here you go -- an easy and good yogurt cake recipe!

1/2 cup butter, softened
1 cup brown sugar
1 teaspoon vanilla extract
1 egg
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup plain yogurt

DIRECTIONS

Preheat the oven to 350 degrees F. Grease and flour a 9 inch Bundt pan.

In a large bowl, cream together the butter, brown sugar and vanilla until light and fluffy. Beat in the egg until smooth. Combine the flour, baking soda, and baking powder; stir into the batter alternately with the yogurt. Spread the batter into the prepared pan.

Bake for 50 minutes in the preheated oven, until a knife inserted into the crown comes out clean.

Note: I've never done this recipe using white sugar, but I'm guessing that you probably could. The cake may not be as moist or rich-textured as it would using brown sugar, but the odds are good that it would still be very tasty.

Been there, done the "more month than money" college thing, too!

If you are using a boxed cake mix then 1 cup of yogurt should cover the milk it calls for and Add a little extra water if needed.

Here is one for you from the website Recipezaar
2 1/2 cups unbleached white flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
3 eggs
1 cup sugar
3/4 cup melted butter
2 teaspoons orange rind, grated
1 teaspoon vanilla
1 cup plain low-fat yogurt
1/2 cup orange juice (I use fresh-squeezed)
For the syrup
1 cup sugar
1/2 cup water
1/2 cup orange juice
1 cinnamon stick remove when done

Vegetarian CakesPreheat the oven to 350°F Butter and flour a 9x13 cake pan.
Combine the dry ingredients (the first five listed).
Beat together the eggs and sugar until foamy. Add the butter, grated orange peel, and vanilla.
Add yogurt, juice, and dry ingredients to the egg mixture gradually.
Bake for 45 minutes, until the cake is firm and golden.
Combine all syrup ingredients in a small saucepan and bring quickly to a boil.
Lower heat and simmer for 10 minutes.

Poke holes into the top of the cake and pour the syrup over it while the cake is still warm. It's going to seem like an awful lot of syrup, but keep pouring!
I think this cake tastes best when it's completely cooled, so try to wait a while before eating.

Cows milk can be replaced by other liquids. Rice milk, soy milk, oat milk, coconut milk, and almond milk are all excellent non-dairy milk substitutes. All of these are available as ready made commercial products, but all of them can be made at home as well. Almond Milk and Coconut milk work very well for many desert recipes, but they tend to be the most expensive. Soy, and oat milk are excellent cows milk replacers, but they may need to be flavored to taste with sweetener or an extract. Rice milk is very universal and perhaps the least expensive to make or buy.

sounds like a blast from my past.

try yogurt (if it is vanilla or natural) or mayonaise (Hellman's). You can actually put a bit of water with either one and thin it a bit if you need to.

that's one of the fun parts of baking - making things up. if it sucks, you just won't do that again!

It will depend on the fruit or plant involved with a comparison. In the event that you compare a farreneheit to a carrot, the carrot is the better of the two nutritional. But once you compare an avocado to the carrot, then your avocado is better. The two the apple and avocado, are fruits.

I do all the time and it turns out great. Be sure, though, to use Skim or reduced fat milk since the fat can make it a little heavy and not rise correctly.

Try using the ice cream but hold back on the sugar or use the yogurt as a milk sub.
