Flip the cake over after baking.
Try flipping it onto a round dish/plate after it cools (approximately 10-15 minutes after baking and not right after it comes out of the oven. It sticks to the pan too much if you leave it in the pan or try flipping it when it's really hot.

I usually flip it about 15 minutes or so after it comes out of the oven. I let the top get cool first or it sticks to whatever you flipped it on to. I also use wax paper in the bottom to help it come out. That way, when you flip it, you don't have to worry about bits stuck to the bottom making an uneven top. The wax paper peels right off. Since I generally frost it anyway, it gets a better surface actually stacking the top layer upside down onto the bottom layer. This makes frosting it a lot less of a pain.

Usually the recipe has specific instructions on what to do after you take the cake out of the oven. Just be careful not to drop it if you are flipping it over! ;)

if you use baking paper under and around the cake (which you should be doing when baking a cake!) you just leave the cake in the tin till is is cold enough to take out. say 3-4hrs for even the next day

To cool it, leave it the way it came out of the pan. The top is too tender to take being crammed into the wire rack, and will stick.
To assemble a layer cake, you may want to flip the top layer to have a nice, flat top. That is fine.
