there is no need to use egg or milk or any batter at all. The best way to fry chicken is to let it soak in salt water in the fridge for a couple of hours, then drain it and pat it dry. Next, season some flour with salt and pepper, and add a tablespoon of baking powder to it. Heat a large heavy skillet and put enough peanut or canola oil in it to come about a half inch up the sides. Roll the chicken pieces in flour and let them sit for five minutes, then flour them again and start frying at medium high heat. It should take about eight minutes per side for bone-in pieces.

Start by first dredging your chicken in the dry coating then into your liquid then back into the dry the result will be a light and well coated piece of chicken - if using a batter first dredge the chicken in corn starch then the batter again a much better baked or fried result.

To make breading stick to chicken, chops etc. do this : Put flour and seasonings in plastic baggie; put meat in bag to coat...dip into beaten egg...then cover in breading; pressing down firmly. VERY IMPORTANT: do this ahead of time and refrigerate meat for several hours..this helps the breading to set.

Whn frying chicken, I roll it in flour, then dunk it in an egg and then more flour. For boneless chicken I crush up cracker crumbs for the last step instead of more flour.
