Do you mean why is it expensive in their own country? Or why is it expensive here in America? In grocery stores, it's expensive cause it's imported. In French restaurants, it's expensive cause it's got the foreign label on it and because they use hard to find ingredients that are generally more expensive to cook with. It's expensive in their own country cause they are smart and know that the stupid American tourists and any other tourists will pay out the wazoo for the delicious taste of a buttery French croissant.

Reputation - it is actually very simple to make (just get a Julia Child's cookbook) but the reputation of the French for being masters has artificially inflated the prices - plus to maintain the reputation "french" restaurants are infamous for using rare and delicate ingredients like Foie Gras and truffles.
