You don't need to be a chef to eat well, there are several easy and healthy ways to eat better with little or no skill. It is best to master simple dishes and don't try to be too flash at the start. I would suggest you get a good beginners cookbook that takes you through things step by step.
As long as you have a balanced diet you will stay healthy. See if you can get a chart of the food pyramid.
