Summer is a wonderful time of year to start a new eating regime since there are so many wonderful fruits and vegetables available now! I'm a big believer in soups during all times of the year that incorporate the freshest of ingrediants. Soup helps get your vegetables in and fill you up when you get hungry. You can also eat them hot, warm or cold, which is appealing to the warmer climates. Here is one of my favorites:
Green Chili Vegetable Bisque:
1 box organic chicken broth
1/2 large yellow onion, diced
2 cloves garlic, minced
3 T olive oil
2 large zuchinni
2 large crook neck squash
1 can diced green chili's
1 15 oz can mild enchilada sauce
1/2 cup chunky salsa
2 T cumin
1 T chili powder
1/2 tsp fresh ground pepper
1/2 tsp kosher salt
1 cup fat free sour cream
1/4 cup asiago cheese
In large sauce pan saute onion and garlic in olive oil until translucent. Slice squash diagonally and add to the mixture. Saute briefly and add broth. Add enchilada sauce, salsa, spices, chilis, and pepper and salt. Bring to a boil and simmer until veges are tender. Remove from heat and blend until soup is creamy, although there will be smaller chunks of veges left. Add sour cream and cheese. Return to heat and simmer for 15 minutes. Add salt and pepper to taste. Serve warm or chilled.

Try and shop as local as possible. Go to the farmer's market and take advantage of fresh seasonal fruits and veggies. (And often if you buy local, it is cheaper) Incorporate more friuits, veggies and whole grains(they also cost less than meat) - less meat-especially beef. Fresh strawberries and vanilla yogurt make an awesome snack or dessert. Tofu is another great protein. You can do anything with it. I cook a lot with olive oil-which is really good for you. There are lots of recipes on the internet. Just pick a main ingredient and go with it. You can also control your salt and additive intake better with fresh foods as well.( I control my blood pressure through diet - not medication. ) It does take a concentrated effort and more effort to eat more healthy, but definitely worth it!! :)

Try doing a vegetable stir fry; 1 cup broccoli,1 cup califlower,1 cup snow peas,1/2 cup mushroom 1/2 cup onion, 1/4 cup soysauce dash of ginger 1/4 cup duck sauce; in a skillet heat up sunflower oil add vegatables and sauce stirfry constantly until tender crisp serve over rice; *** an added touch serve with frozen vegetable eggrolls. Pasta, rice with vegetable dressing
fruits and veggies of the season (ALWAYS!)
fish- not lobsters they're full of cholesterol!!- like cod
use less fat and more spice, herbs: they add taste but not calories! parlsey, rosemary, basil for example..
dress your salad with a mix of olive oil and lemon juice and herbs
buy fresh bread from the bakery and not alchool-and-dextrose bread from the supermarket
eat more chicken and turkey and less beef and pork
