Yes it will be reddish pink , but it will be tender when you stick a fork in it and you can seperate it. It will tear apart and be stringy like. Corned Beef and Cabbage w/potatoes, Now you are making me hungry. That is my favorite meal. I'm Irish of course.

usually slo cook brisket (250 or so) for six hours or so, pink in the middle is ok, but light brown is done

The colour of the corned beef will depend on its cure. If you bought it red it will stay red; if you bought it grey it will stay grey, except for uncured brisket which will cook up like any beefsteak.

I do ours in the crockpot for like 8 hours on high and the middle is still pink and it's so tender. Red is bad, pink is OK. If it's all brown it's over-done.
