I am trying to get together a pool of meal ideas to draw from on a monthly basis to plan meals for my family. I have a 4 year old, 2 year old, myself and my husband. As far as picky eaters, my husband prefers no onions or tomato, but is willing to pick them out if he must.

Let me know what your favorite meal is, and if it's something un common, feel free to throw in a recipe :) Thanks for your input, I'll choose the yummiest as best answer!

My kids are 8,5 and 3 so I know about having to please all....luckily my husband isn't too picky...he doesn't really like onions either.
Here are a few meals that go over well with everyone.

Cheese Enchiladas with the green sauce you get in a can...it is mild. Lots of cheese and olives my kids love olives so they are excited when we have this and everyone wants seconds. Simple too! Corn tortillas...soften them in hot oil first or they'll break....put a little sauce on the flat tortilla...lots of cheese (olives already mixed in with the cheese) roll up and put in a baking dish...repeat until dish is full...cover with remaining sauce and cheese...stick in 350 oven until cheese is melted. About 45mins.(give or take 15mins.) Have a spinach salad on the side with hard boiled eggs in it and any other fixin's you like in your salad and you've got a meal.

Chicken Cordon Bleu
Boneless skinless chicken breasts
ham or turkey ham(about 1/4 inch thick,deli would be fine too)
Swiss cheese
Bread crumbs

pound out the chicken with a pan to make it flat
lay a piece of ham and a bit of cheese in center roll and insert a few toothpicks to hold together.
do a "wash" roll the rolled up chicken in flour, then an egg wash (which is just a few beaten eggs) and then the bread crumbs.

Place in baking dish
Put in 350 oven for 1hr. Yummy!!
Serve with any sides.

OK...this one is way easy.......
get the already cooked grilled chicken strip in the grocers freezer and the pasta roni pasta shells in a white sauce.....cook the pasta as directed on box and warm the chicken...throw it together and it tastes wonderful together....my husband actually made that one...maybe serve some peas with it...then the kids can put the peas in with the pasta if they don't care or them too much...the sauce will mask the flavor of the peas...

anyway those are just a few ideas...i hope you try them and enjoy them.

These are some of my husband's favorites, mind you they aren't particularly healthy at all, but hey the really good things usually aren't right? Feel free to substitute fat free whatever.

Salisbury steaks
Take ground beef (or turkey) and form hamburger patties. Add salt and pepper. Cook hamburgers, and drain the fat. Add one or two jars of Heinz homestyle brown gravy (or your own brown gravy, I like jar-it's EASY) over top of patties and simmer until bubbly and warm. Serve over rice, egg noodles, or mashed potatoes.

Beef Stroganoff (Or Serena's slop as we call it around here!)
Crumble and fry one pound of ground beef or turkey and drain the fat. Add one 16 oz container of sour cream, and one can of cream of mushroom soup (use the soup as it is out of the can, don't add water) Mix with hamburger well and heat until hot. Serve over egg noodles.

Cheesy Meatloaf
Mix meatloaf seasoning, 1 tbsp. worcestershire, 1/2 onion diced, 1 whole small green pepper diced, 2 eggs, salt, pepper, and 3 or 4 slices of bread crumbled, or crackers (try Ritz type it's good) and form meatloaf. Put in loaf pan. Take a small spoon and scoop out hamburger in a long line through the middle of of the loaf, making a well. Add diced velveeta cheese (or sometimes I use mashed potatoes too) and add the scooped out hamburger back over the top of well. Bake as you would a normal meatloaf, about an hour. The cheese will be completely melted throughout the loaf. The mashed potatoes will be done and a little crispy around the edges. YUM
Great. Now I'm hungry!!

I love to make a rendition of chicken cordon blue.....and its sooo easy.
Puff Pastry
2 Boneless Skinless Chicken Breasts
Old Cheddar Cheese
Black Forest Ham
Just take puff pastry, preferrably frozen that comes with 2 slices. Roll out half and Lay it on the bottom of a circular 9"x9" baking dish.
Cut up the Raw Chicken Breast and layer on top of the pastry.
Place Sliced Black forest Ham on top of chicken in one or two layers (depending on how much you want), then cut the cheese into strips and layer on top of the ham.
Once that is done, roll out the other half of puff pastry and lay on top, fold in edges to seal and bake at 350*F for about 30-45 minutes or until the puff pastry is browned.

Its really easy and it will go with any veggie that you make as a side!!

the meal i have found that doesnt take much effort is chicken pasta bake, boil the pasta for about 10 mins till fairly soft, drain add 3 tins of chicken in white sauce and mix, pop into a oven proof dish and grate cheese on top, pop in oven 180 degrees, while this is cooking pop on some veggies to boil, this takes approx 20 mins to cook so once veggies are cooked serve, lovely and all the family enjoy, have it with salad in the summer

My family love tostadas. It is simply...
pinto beans from a bag. You rinse them add bacon and onion to them and cook the for a couple of hours in a big pot with lots of water. After they are done, remove the onion and bacon.

Cook a pound of ground beef and season it with any all season you can find.

After the beans are done cooking, you get a big skillet and fry them while smashing them adding some bean juice from the pot.. After the beans look like refried beans, add the cooked ground beef and mix.

Cut up onions, tomatoes, lettuce. Buy hard shells and salsa from the store and your dinner is done. Simple and the kids love it.

Trader Joe's has a great breaded chicken fillet in the freezer section. If you bake that via the directions and serve it on top of brown rice with a mild lemon/dill sauce on top and a small salad with blue cheese on the side, you have a cheap quick and tasty dinner.

Anything on this page. The kids would probably love pho and any rice vermicelli dish. My favourite is Bahn Mi (the Vietnamese sandwiches). Vietnamese is delicate and fragrant and not at all weird or scary, YOU add the chilis or the chili paste, and everything is also VERY healthy, low fat, fresh....

a favorite is chicken fajitas ours are really simple and delicious cook chicken we usually do 1 or 2 lbs any kind whatever is in the budget cut in into little chucks add some poutry seasoning (if you want) make sure its cooked in the pan add one red pepper and one green pepper cut into chunks and we also add 1 onion (we are big fans of cooked onions here) now just put the lid over top till they are warm but not squishy still a little crunchy and put on a wrap and add ranch dressing to taste these are great my 2 yr old loves them as do me and my husband

really tight on time buy the precooked little chickens at the grocery store in the ready food section for 8 bucks

these 2 take a little more time but is worth it to me

chicken alfredo garlic

start 1 lb of chicken breast cut into little chunks cooking
start spagettini cooking about 300 grams in a separate pot
once chicken is cooked add 2 cups of milk 1/2 a cup of cream cheese or 1/2 of a 250 gram tub (i mix them together with a little hand mixer it makes it easier)
add one large red pepper cut into strips
add 1/4 cup of parmasean cheese
minced garlic to taste and a shake of oregano (you can you peso here if you prefer 2 tbsp) we like garlic better
add a little corn starch to thicken if nessesary pour over pasta
its great


chicken pasta skillet

you will need one big frying pan or a wok
cut 1 lb chicken breast into small pieces start cooking
start 2 cup rotini pasta boiling in another pot
after chicken is cooked add1 med green pepper sliced one small onion (you can figure out something else if you like)
once veggies are tender add pasta and one can of pasta sauce 680 ml or more whatever kind you like i get the garlic kind :D
now let it simmer for 5 min or till sauce is hot as well sprinkle 1 cup mozarella cheese over top and your done mmmmm mmmmm
