I have had about 10; I used to go to Switzerland each year during it's annual restaurant festival "Saison de la Chsse" (season of the hunt) and went ga-ga. I now live in Québec where game meats are commonly sold in supermarkets (horse, too). My favourite is wild boar. We generally will choose warm, racy red wines like Chteauneuf du Pape, Italian Sangioveses, La Manchas and Valdepenas from Spain, many Portuguese wines, also Argentine.

When I was a chef in Canada I guess the wildest meat I had was Musk Ox when I work in Iqulit in Nunavut.

I had turtle meat in the Bahamas, I was offered a wild pig type meat in Singapore, but with all wild game you need a robust, fruity, but bold wine with hints of raspberry, vanilla and a rich tannin based flavour, even with wild fowl like pheasants, quail and partridge they are quite good, in the UK I had wild grouse, not the scotch.

When in Thailand they had some wild songbirds cooked in the same reddish sauce as the chinese BBQ pork. Never got to taste the meat but I did have yak cheese, it would have gone well with a nice French Sauterne.

Quite a few here. Houston has a couple of excellent wild game restauarants, including the famous Rainbow Lodge. Many of the steakhouses also offer some interesting selections, as well as the Brazilian Gaucho place like Fogo De Chao.

Venison steaks are good, so is Elk. Wild Boar steaks are OK. Buffalo steaks makes me worried due to potential Hepatitis A. Ostrich meat is sort of tough. Alligator meat I don't care for. Turtle soups are great. Rattlesnake sausage is nasty. Like geese, ducks, quails, pheasants, many of the birds. Also had weird fishes as well as sea urchin, snails, etc.

For most of the red meat, I found them with that gamey smell, so I like to pair them with big strong red wine such as Syrah or Petit Syrah. I found that the spiciness of those two wines tend to go very well with the strong flavors of the game meat. Personal favorite include Pride Syrah ($55), Penfold Syrahs (anything above $20 and up to $200), DeadArm ($100), Aida Petit Syrah ($40), Rosenblum Petit Syrah ($30), or Meeker Petit Syrah ($25).

As for the game birds, I like a good Zinfandel, which has a bit of sweetness to go with the birds. I usually try to choose Turley Zinf ($50-80). Had some Turley Duarte Zinf with my Suckling Pig tonight, wonderful.

As for fish, I like fruitier white wines such as Conundrum ($25) or La Serina Muscato Azule ($30).

oh i've had a slew.
venison, elk, boar, bear, goose, turkey, bison, aligator, and a bunch other that i can't recall.
if you can find a place call the mongolian bbq near you--- they have exotic meats there in abundance. it's all you can eat. you can request almost anything (legal) and they will serve it up to you
