I believe cucumbers are picked when they are small and then the pickling process is done in a vat. I could be wrong.

You are so silly . . . a regular cucumber is a fresh one, but a pickled cucumber is either a sweet pickle, a dill pickle, a sour pickle or a bread & butter pickle. Whichever it becomes when it gets pickled is up to the pickler's choice. Small cucumbers are usually sweet gherkins and the great big cucumbers get to be either giant sour pickles or giant dill pickles. Like a lot of other things in the world, size has nothing to do with it. A pickle is a pickle is a pickle (unless you chop it up and make pickle relish), but a cucumber is a cucumber unless it goes and gets itself pickled.

a gerkin is often used in pickling bse of the small size, or you can cut them up in salads.
the larger reg cucumbers can be used too but from what i have seen/experienced they get soft/don't stay as crisp when you pickle them.
my grand mom always used gerkins or small reg cuces.
they also have other cuce varieties that are extremely long and thin, some w and w/o seeds too.

The size and the species of cucumber. The smaller ones have a more concentrated flavor.
