To make it simple:

Dip fish pieces in beaten egg and dip in flavored bread crumbs, fry in oil that has been heated a bit- but be careful not to burn the oil-medium to medium high heat in a non stick skillet is perfect. When both sides of the fish are golden brown remove with a spatula and place on a paper towel lined plate. Enjoy

Deep-Fried Tilapia (Fish)

This is a no-fail recipe for MILD, white, flaky, not greasy, and delicious fish for either sandwiches or as a main entree on a plate. The trick is to get the cooking oil plenty hot, 375-degrees F or higher. Also, there is no "drenching" in egg wash involved in this recipe. Tilapia works best but Whitefish fillets are also great. Use either Canola oil, Peanut oil, or Crisco. Others may "smoke" at high heat. If you wish to mix in additional favorite herbs or spices into the flour, (e.g., a teaspoon of dried basil, or, Old Bay Seasoning), go right ahead. Easy! Enjoy!

15 min 10 min prep

4 tilapia fillets
1 quart cooking oil (or Crisco)
1 1/2 cups seasoned flour (I use Kentucky Kernel brand)

1. Heat the oil in a 3- or 4-quart pan to at least 375-degrees F. (just a couple of drops of water flipped off your hand will really crackle when the oil has reached this heat level).
2. Roll the DRY and THAWED fish in the flour, shake off excess flour, and let the filets sit on a rack or, on wax paper, for 5-10 minutes.
3. Roll the fillets in the flour a second time, shake off excess flour, and deep fry, no more than 2 at a time. (frying more than 2 filets at once drives down the oil temperature which will make the fish and coating soggy!) Turn once in the pan after a minute or so and remove when golden brown. They should be done in under 4 minutes, white and flakey inside at the thickest section of the filet. Do not overcook!
4. Drain each filet on paper towels for a few seconds and serve.

Pan Fried Tilapia

Another very simple recipe...and a healthy one as well.

10 min 5 min prep

1/4 cup olive oil (good quality extra virgin)
1/2 cup cornmeal
1 tablespoon Old Bay Seasoning
2 tilapia fillets
2 tablespoons Miracle Whip
1 tablespoon sweet relish
1 teaspoon lemon juice

1. Warm up olive oil in a 10" or 12" skillet.
2. Mix the corn meal and Old Bay seasoning thoroughly, then spread out on a platter.
3. Coat tilapia fillets lightly, but thoroughly with corn meal and Old Bay mixture.
4. Lay coated fillets in hot olive oil (medium-medium high heat) and cook until golden on the bottom, then turn fillets over and repeat.
5. Do not overcook the fish.
6. it's easy to do.
7. While fillets are cooking, combine Miracle Whip, sweet relish, and lemon juice and stir until well blended, then serve with the fish.
8. It's quick, easy, and doesn't require a lot of cleanup.
9. Steamed carrots or broccoli and some form of potatoes go well with this.

Tangy Pan Fried Tilapia

I don't remember where I got this recipe from but is is lower cal that most. You can also bake but the crust is much better when you pan-fry.

25 min 15 min prep

1 lb tilapia fillets
1 1/2 cups panko
3 tablespoons Dijon mustard
1/4 cup olive oil
salt and pepper

1. Coat Tilapia fillets in Dijon mustard.
2. Then dip in panko to coat.
3. Heat oil in skillet on med/high - I try to use as little as I can get away with.
4. Pan Fry fillets until golden brown on both sides.
5. Try to turn fillets only once since Tilapia is delicate and can fall apart.
6. Season with salt and pepper while still hot.

Best way is to lightly fry is a light batter. Dip fish in milk bath and then roll in crumbs (any crumbs will do...even crumbled potato chips work!). Heat pan, add oil to cover bottom, reduce temp to medium, add fish, cook on one side for 3-4 mins and then turn and do it again.

Simple. Easy. Delicious!

i lightly season mine w/ cayenne, fresh cracked pepper, garlic salt & seasoning salt, then put the fillets in a pan w/ olive oil. they cook pretty quickly. just watch it until it starts to brown, then flip & let it brown. that's it.
