I love soup! I have many kinds of soup that I like. I'd say I have three favorites though. If you also have any tips on making the soup you like please explain.

Cheeseburger Soup
1/2 stick butter, divided use
1/2 lb. ground beef, browned and drained
3/4 cup chopped carrots
3/4 cup chopped onions
3/4 cup chopped celery
1 teaspoon dried basil
1 teaspoon dried parsley
3 cups chicken broth
4 cups peeled, cubed potatoes
1/4 cup all-purpose flour
8 oz, Velveeta cheese, cubed
1 1/2 cups milk
3/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup sour cream

In a heavy saucepan, melt 2 tablespoons butter; saute carrots, onions and celery until tender. Add basil, parsley, broth, potatoes and cooked meat; bring to a boil; cover; reduce heat and cook until potatoes are tender. In a small skillet, melt the remaining butter; add flour, cook and stir until bubbly. Add to soup mixture; bring to a boil stirring constantly. Cook and stir for 2 minutes more. Reduce heat to low. Add cheese, milk, salt and pepper; cook and stir until cheese melts. Remove from heat; blend in sour cream. Makes about 8 cups. Delicious!

Rice with Milk (Arroz con Leche) - not too many people like this soup, it's more of a soup given to childre with an upset stomach for whatever reason, I've bee eating this since I was little and love it, I have a feeling it's more of an emotional attachment since my grandmother use to make it all the time for me and it brings back great childhood memories!

Pigeon Pea "Gumbo" (Asopao De Gandules)

Gallego Style Broth (Caldo Gallego)

Cilantro Soup (Aguadito) - you really have to like cilantro to like this soup...if you don't like cilantro you can forget about it!

Chick Pea Soup (Sopon de Garbanzo)

I make a seafood soup that is pretty awesome. start with a large heavy pot, cutup about 1/3 pound bacon, render it down good and crispy, dont drain, put in chopped onions, and chopped garlic to your taste, salt and pepper, cook onions and garlic till translucent, add some sliced smoked sausage, something like andioue, brown sausage, over low heat as not to burn the onions, garlic and bacon, put in some chopped red potatoes, add 2 cans of chicked stock, a lil water if needed, after potatoes are just about tender add 1 can tomatoe sauce and one can of chopped tomatoes, jiuce and all, Add 2 small cans of chopped clams, juice and all, Then add some shrimp, mussels(in the shells) crab legs(in the shell) maybe two kinds of fish cut into chunks, I like cod or halibut, Pretty much the skies the limit with the seafood, oysters are good, scallops, calamari. The seafood cooks quick so no more then about 10 mins. of cooking for it. Garnish with some fresh parsley and chopped chives, crusty french bread and you'll be in heaven.

Mushroom soup.

I tend to cook with no measurements because I eye everything according to taste.

I use a food processor to puree the brown mushrooms with a drizzle of olive oil or butter, chicken stalk (about 4 top 6 cups), some chopped garlic and brown onion and sea salt and fresh cracked pepper to taste.

I chop some remaining mushrooms.

Put it all into a pot and cook it slowly and then I add some chopped fresh parsley at the last minute and wallah, a great accompaniment to a steak dinner with a lovely garden fresh salad and red wine.

My favorite is Beef Barley

3 big meaty beef shortribs
1 large onion, diced
2 cloves garlic, minced
2 carrots, chopped
2 ribs celery, chopped
1/2 c pearl barley
8 c beef broth or stock

put beef shortribs in bottom of soup pot, put rest on top. simmer 2 1/2 hours. Remove bones and fat and cut up meat and return meat to pot. add other veggies you like - green beans, peas, corn. cook until veggies are done.

Cheesy potato soup with veges

Boil potato cubes in chicken broth with onoin and garlic until
tender (don't drain) - add steamed broccoli, carrots - add a small carton of half and half - add velveta .

This is very rich but really good.

I really like to make (and eat) broccoli cheese soup. It's so easy and it makes a filling meal. Plus, you can add potatoes, other vegetables, chicken and add creative toppings like sour cream, bacon bits, etc.
