Cook what you do well. Doing something for the first time is way too risky when trying to impress. An impressive dish comes with experimentation and practice. Stick with what you know. You can liven it up with interesting side dishes, but NOT the main item.

Unfortunately the thing I am best at cooking is Spaghetti Bolognaise and I wouldn't dare trying to impress someone with it. Even though it tastes nice it has to the the most messy, undignified meal ever. You end up with a bright red mouth and sauce all over your chin - not attractive! So my next option would be salmon fillet baked in the oven with a bit of olive oil and some fish seasoning, served with new potatoes and seasonal veg.

It all depends on if you knwo how to cook-if you do not, then stay simple like raviolis or a pasta dish which is pretty much a dish you can not screw up. If you are a good cook, pick the dish you like the best. Always accompany with wine-you cannot go wrong with wine!

Shepherds pie with broccoli and buttered carrots, but I don't live in the UK.
For larger parties, a turkey with a chestnut stuffing, accompanied with carrots and the dreaded sprouts (still firm), bread sauce, cranberry sauce, GRAVY and roast potatoes. Keep the flag flying!
If I'm cooking for Brits, I make a mean Jingha (prawn) Madras, with raita and pickles or a Szechuan fried pork with stir fried pak choi.
To drink? With Shepherds Pie, beer, with turkey an Australian Chardonnay and with Indian or Chinese food an Australian Rosé.

I think one of the easiest meals I have made that everyone loves is fettucine alfredo with shrimp. Instead of fettucine, use bowtie pasta. You can even buy the alfredo sauce that is in the jar, just toss in some extra italian seasonings, put some garlic toast in the oven and youre set. Serve with red wine or sangria.

Looks like you went through a lot of work, but its pretty simple and practically goof proof so you won't be ruining anything.

I have a great spinach and swiss cheese enchilada dish that never fails to impress. I serve my special sweet and spicy refried beans on the side and offer a nice chilled white wine for a drink, although sometimes I'll make a sangria instead.

There are a great many possibilities from baked salmon to Cornish game hens to pasta.

The Cornish game hens are easy and sure to impress. Thaw them, wash them, season with salt and pepper, and stick them in a 350 degree oven until golden brown. While waiting fix some rice (a wild rice blend is an excellent choice) and a vegetable (asparagus is a good choice if your date doesn't have a problem with it). Serve with a nice Chardonnay.
