I have already boiled the eggs, but they keep falling apart when I am trying to peel them? any suggestions?

After you remove them from the boiling water drop them into a mixing bowl filled with ice water for 3-5 minutes. They are much easier to peel. Also, the pH of older eggs (a week or more) is more desirable for easy peeling--so if you have the option don't boil fresh eggs.

As soon as the eggs are finished boiling, pour the hot water off of them, and add cold water to them. Let them sit in cool water for about 5 minutes, then peel them under cool, running water.

You should stick them in cold water and let them cool before starting to peel them. Start by gently breaking the shell and peel the hollow (small) end of the egg and the rest should come off easily.

After boiling them, I run them under cold water for a couple of minutes, then crackthe shell and peel it under cold running water. Works for me every time!

Run them under cold water while you are peeling them. Make sure you have cracked the shell all over before you start.

You can stick them in the fridge for a few minutes while you go do something else. By the time you get back to them, they should be firmer and easier to handle, as compared to when they're fresh out of the hot water. :)
