Fried rice is all about using up left overs. Start with some cold rice, and left over cooked beef. In a wok heat some oil, and stir fry some onions, and other desired veggies until tender, then add the cooked beef and cook until just about warm, then add the cooked cold rice and stir fry that until everything is heated. Then add dark soy sauce to taste.

You must start with cold rice ! In a large pan add some oil some onions, and garlic, cook en down a bit, add some frozen peas and carrots, add some already cooked beef, thin sliced flank steak works well, then add rice, add soy sauce to your taste, Try different brands as I find the flavors very greatly. add some par boiled broccoli peices, then add some scrambled eggs that you cooked in a seperate pan. mix well and enjoy. You gotta keep a pretty hot pan going when making this and stir alot.

Beef Fried Rice
Prep: 10 min, Cook: 10 min.
* 2 Tbs. soy sauce
* 1/2 tsp. sugar
* 1 Tbs. vegetable oil
* 2 eggs, well beaten
* 1/2 lb. ground beef
* 1 medium carrot, finely chopped
* 1 celery rib, finely chopped
* 1 scallion, chopped
* 1 tsp. fresh ginger, minced
* 1 clove garlic, minced
* 2 cups cooked rice, cold
Combine soy sauce, sugar and salt and pepper to taste in a small bowl and set aside. Heat oil in a heavy nonstick skillet over medium high heat. Cook eggs about 45 seconds, stirring constantly, until eggs are just set. Transfer eggs to a bowl and set aside. Add ground beef and next 3 ingredients to same pan over medium heat. Sauté about 3 minutes, stirring often to break up meat, until browned. Stir in ginger and garlic and cook 1 minute. Discard excess fat. Increase heat to high and add rice. Stir-fry about 1 minute, until heated through. Stir in soy sauce mixture and eggs and stir-fry 30 seconds longer.

Just follow this recipe, using already-cooked beef. You can also use shrimp, cooked pork, cooked chiken, or scallops.
Fried Rice with Ham
Serves 4.
3 large eggs, lightly beaten w/ 2 tsp. waer
2 Tbsp vegetable oil
Coarse salt to taste
4 green onions, thinly sliced diagonally (both white and green parts)
4 garlic cloves, minced
5 oz. ham, thinly sliced and chopped
4 cups cold cooked rice
¼ tsp. sesame oil
3 Tbsp. rice vinegar
1 cup frozen peas, thawed
In a large nonstick skillet, heat 1 Tbsp. oil, swirling to coat. Beat eggs, with 2 tsp. water and ½ tsp. coarse salt. Cook in skillet, moving cooked eggs aside gently to allow raw eggs to run in their place, about 2 minutes. Transfer to plate; when cool enough to handle, cut into strips.
In same skillet, heat remaining Tbsp. oil. Add garlic and scallions, heat and stir until fragrant, about 1 minute. Add ham and rice, season with salt and sesame oil, and cook until very hot, stirring often, about 5 minutes. Add vinegar, peas, and eggs, cook until very hot, about 2 minutes.
