You can dehydrate them. Then use them for tea, or water or anywhere else you use lemon. Slice them very thin, place on cookie sheet and cook in oven at about 300 or so for a few hours (2)....then turn up heat to make crisp.
You can also clean out your microwave. 1/2 lemon in about 2 cups of water and on high for 5 minutes. Then just wipe the inside down with a cloth.

Lemon Bars
For the crust:
1/2 pound unsalted butter, at room temperature
1/2 cup granulated sugar
2 cups flour
1/8 teaspoon kosher salt
For the filling:
6 extra-large eggs at room temperature
3 cups granulated sugar
2 tablespoons grated lemon zest (4 to 6 lemons)
1 cup freshly squeezed lemon juice
1 cup flour
Confectioners' sugar, for dusting
Preheat the oven to 350 degrees F.
For the crust, cream the butter and sugar until light in the bowl of an electric mixer fitted with the paddle attachment. Combine the flour and salt and, with the mixer on low, add to the butter until just mixed. Dump the dough onto a well-floured board and gather into a ball. Flatten the dough with floured hands and press it into a 9 by 13 by 2-inch baking sheet, building up a 1/2-inch edge on all sides. Chill.
Bake the crust for 15 to 20 minutes, until very lightly browned. Let cool on a wire rack. Leave the oven on.
For the filling, whisk together the eggs, sugar, lemon zest, lemon juice, and flour. Pour over the crust and bake for 30 to 35 minutes, until the filling is set. Let cool to room temperature.
Cut into triangles and dust with confectioners' sugar.

Make Greek Chicken! You only need one lemon, so with the others make lemonade!
GREEK LEMON CHICKEN
1-2 tablespoons extra virgin olive oil
1 lb (500g) chicken thighs diced into 1" squares
4-6 cloves garlic
juice of one lemon
5/8 cup (150ml) water
1/2 tablespoon dried oregano
1 teaspoon (generous) freshly ground black pepper
3/4 cup rice
Peel and crush or chop garlic, set aside. Chop and squeeze lemon and add to cup measure.
Fill cup to 600-750 ml with water. Add olive oil to hot pan and add chicken when oil has begun to get hot. Brown chicken on all sides, approximately 5-10 minutes total, reduce heat.
Add oregano and black pepper; stir into chicken mix.
Add lemon/water mixture and stir gently till all is mixeed in. Simmer until most of the liquid has been reduced and all of the flavours have been combined, serve with freshly cooked/steamed rice.
Serves 2.

LEMON MERINGUE PIE
Have Ready:
1 pre-baked prepared or home-made pie crust shell
Preheat oven to 300°F.
Filling:
7 tablespoons cornstarch
1 tablespoon flour
1 3/4 cups granulated sugar
2 cups water, boiling
4 egg yolks, beaten
grated rind of two lemons
1 tablespoon butter
1/4 teaspoon salt
1/2 cup unstrained lemon juice
Sift together cornstarch, flour, and sugar. Whisk in boiling water, continuing to stir until mixture becomes smooth.
Cook the mixture in top of a double boiler for five minutes. Be sure the water in the double boiler is simmering before the five-minute count begins.
Meanwhile, beat four egg yolks. Stir several tablespoons of the hot mixture into the beaten egg yolks (to temper), then slowly combine the egg yolks entirely with the remaining hot mixture. Stir in grated lemon rind, butter, salt, and lemon juice.
Stir constantly, continuing to cook until the egg yolks become smooth and thick.
Pour the filling into the baked pie shell. Cover with meringue (see below) while still warm, but not hot.

Use the juice of the lemons to marinate boneless skinless chicken breasts. This will work for a small amount maybe 2 breasts. Then use the other lemons and slice them thinly add them to the grill and grill the marinated chicken breasts on top of the lemon slices. this infuses the chicken with more lemon flavor.

A lemon cream sauce, toss some vegetables like squash and mushroom in it, and some angel hair or linguine, and have a great dinner.
But you could always make hard lemonade. ;)

You can use them in a really nice lemon muffin , also use some white chocolate chips (sparingly) it helps the muffins to not be so sour.
