Use applesauce.
I think that the exchange is 1/4 a cup of applesauce for each egg.
It keeps the cake SOOO moist -- it's a little more dense than it would be with the eggs, and it's just so yummy!

Vanilla Eggless and Dairy Free Vegan Cake
a simple yellow cake that is easy to make and very tasty
1 1/2 cups unbleached all purpose flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup vegetable oil
1 cup soy milk
1 tablespoon vanilla extract
1 tablespoon vinegar
# Heat oven to 305°F
# Prepare cake pan: Line 8 inch cake pan with parchment paper and grease bottom and sides of the pan. Then flour the pan.
# Whisk together flour, sugar, baking soda, and salt.
# Add vegetable oil, soy milk, and vanilla extract; whisk until no lumps appear and batter is smooth.
# Add vinegar, stir about seven times, and quickly pour into pan.
# Bake around 30 minutes, until cake begins to pull away from sides and/or toothpick inserted in the center pulls out clean.
# Let sit for ten to fifteen minutes, invert, and cool on rack.

QUICK CHOCOLATE EGGLESS CAKE
1-1/2 cup flour
1/3 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup sugar
1/2 cup vegetable oil
1 cup cold water
2 tsp vanilla extract
2 tsp vinegar
Preheat oven to 375°F.
Spray a small baking pan (8x12) with vegetable spray or Baker's Joy.
Combine dry ingredients directly in the pan. Mix all the wet ingredients
In a small bowl, combine remaining ingredients leaving out the vinegar until the final step.
Combine wet and dry ingredients, stirring together in pan until well combined. Stir in the vinegar rapidly and immediately place pan into preheated oven and bake for 25 to 30 min.
Optional: You can stir in 1/2 cup semi-sweet chocolate chips just before baking to make a richer cake with melted chocolate bits or swirls.

Wacky Cake
INGREDIENTS:
1 1/2 cups unbleached all-purpose flour

3 tablespoons unsweetened cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla
1 teaspoon vinegar
5 tablespoons vegetable oil
1 cup cold water
PREPARATION:
In a large mixing bowl, mix flour, sugar, cocoa, soda and salt. Make three wells in the flour mixture. In one put vanilla; in another the vinegar, and in the third the oil. Pour the cold water over the mixture and stir until moistened.
Pour into 8 x 8-inch pan. Bake at 350°F. oven for 25 to 30 minutes, or until it springs back when touched lightly.

chocolate cherry cake
Ingredients
Box dry devils food cake mix;
12 oz sparkling water (or a can of coke or diet coke);
1 can comstock lite cherry pie filling
Instructions
Spread cherry pie filling in bottom of 13x9 pan. Mix cake mix and sparkling water with wire whisk. Spoon over cake mix. Bake 350 for 30 minutes.

if your using a cake mix use apple sauce instead!! Many of the boxes even have it on the back. 1/4 cup of applesauce equals one egg! Happy Cooking!

Search google for a "Depression Cake." Those were common in the 1930's b/c they did nto contain eggs or butter, both expensive and hard- to- come- by- ingredients at that time.

any cake recipe will do...just leave out the egg and instead add two teaspoons of vegtable oil, or olive oil if preferred, or corn syrup if you want it sweeter. mix the batter extra well and bake normally, testing with a toothpick occasionally in the center.
