We do something very simple.
Cut zucchini in half long wise. Brush or rub cut side with extra virgin olive oil. Sprinkle with a hot pepper powder like chipotle or jalapeño. You can find them in the rubs section of most grocery stores, I'd imagine.
Anyway, grill cut side down directly on the grate for 10 minutes or so, depending on the size of the zucchini. This also works well with yellow summer squash.

Grilled Zucchini
* crush garlic, add to olive oil and let it stay room temperature for an hour ...
* make for each piece to be grilled a piece of aluminum foil and line it with a piece of parchment exactly the same size
* wash zucchini, pat it dry, cut in half
lengthwise, lay each piece on the prepared foil/parchment and brush it all over with the garlic oil ... you may sprinkle on herbs & a little salt at this point if you wish, or leave it as is.......
wrap the packages ...
* grill them
* if you wish, after they are grilled,
let the packages cool so you may touch them without burning your fingers, open them carefully so no steam burns you, and put them directly on a clean, hot grill to color nicely ....
* serve

large zucchini cut into 1/2-inch-thick slices
3 tablespoons olive oil
2 teaspoons oregano
2 garlic cloves, minced
1/4 teaspoon rosemary
salt and pepper
Preheat grill. Brush zucchini with olive oil. Sprinkle both sides of zucchini with oregano, garlic, rosemary, salt and pepper. Grill until zucchini is tender, about 4 minutes per side.

Just salt and season it or something like this.
GRILLED ZUCCHINI
Aluminum foil
4 sm. zucchini
1 med. onion, sliced
1/2 lb. mushrooms, sliced
1 sm. clove garlic, minced
1/2 tsp. salt
Pepper
2 tbsp. butter
Tear off an 18 inch square of heavy duty aluminum foil. Cut zucchini into 1/4 inch slices and place in center of foil. Add onions and mushrooms; sprinkle with garlic and seasonings; dot with butter.
Bring 4 corners up together in a pyramid shape; fold opening together loosely to allow for heat circulation and expansion; seal by folding over ends and pressing to package. Grill over medium hot coals for 30 minutes or until tender.

If you cut the zucchini in large enough peices, it can go directly on teh grill. I just brush mine w/ a little olive oil and grill. Before it gets too limp, take it off and salt and pepper it. I will often cut it nto long "planks" (from stem to end) so it won't fall thru the grills.

cut into peices, put on skewers, brush with an olive oil butter mix, salt and pepper to taste then grille, when done sprinkle with some parmesan cheese. also can put some onions on the skewers.
