Or is it what day they were made at the factory? What color means what day?

Each bread company uses its own color code, so there isn't just one that will apply to everything on the shelf.

Bread is delivered five days a week, Monday Tuesday, Thursday, Friday, and Saturday, and the bread maker puts a different colored tie on to designate which day of the week the bread was baked:
Monday - Blue

Tuesday - Green

Thursday - Red

Friday - White

Saturday - Yellow

I used to work in a grocery store and noticed no pattern...ie blue always means Tuesday. In fact sometimes it was a real pain to try to quickly pull the spoils because sometimes two days in a row had the same color. But yes all the codes that are the same will have the same color.

It depends on the bread company. Some use it for different types of bread, some use it as days of the week, etc. So it would be impossible to tell which colors mean which days since companys do not have a universal code. Bread is not delivered to most stores every day of the week, but if your store has a bakery inside the will usually bake it fresh every day.

When I worked at my areas bakery we used color coded tags for the days of the week like... monday=red. I'm not sure about large companies doing this too though...
