general conventions say room temperature works fine for a merlot (unless you're in an oven or an icebox. generally room temp is somewhere near the mid 70's F.)

although, there's a growing trend of serving a slightly chilled merlot or malbec. i personally like this if i'm drinking the wine alone, the taste is mellowed slightly and the wine loses a bit of its earthy qualities. this is especially nice for the summer and its very "now." Food Gang in the design district has started to offer chilled red wines as well as Wish on SoBe.

Well at the moment our room temperature is hovering just under 30C and so we chill the merlot to about 15 C. It will depend on the region and age of the merlot as to what is best but our merlot's are robust and fruity and delicious with a slight chill.

i store mine in a wine fridge at 54 degrees Fareneheit. Bring it out and open about 20 min prior to serving to warm it up to low 60s. When people say "room temp wine' they are referring to what the room temp was back i europe in the 1800s before heating and cooling systems. Which generally means 60 - 65 degrees farenheiht. Room temp does not mean 75 degress like your house is now days with the AC or heat on. That would make the alcohol too overpowering. Most wines lose their taste appeal when served above 72 degrees.

Red wines are never chilled, only white. As a general rule. But I have to tell you this. Do what you like.
