I can't seem to find applesauce made with the skins on the internet and since many of the nutrients are in the skins, I want to know if they will be just as potent after the apples are cooked.

Please remember that some nutrients come out more when foods are cooked or steamed... just wasn't sure if apples were one of them.

no they wouldn't be as they get burned to charcoal as they cook.

All foods lose nutrients when cooked, including meats, but it wouldnt be real wise to eat raw meat. If the product is steamed or boiled, you'll likely lose most of the nutrientin the water.

The apple skin is a protection from the elements and is removed,usually, so the apple can and will cook quicker.

Most of the fiber in apples is in the skins as is quercetin which is anti-inflammatory & good for allergies & congestion. It helps lower bad cholesterol. Contains pectin which is good for the gastrointestinal system.
