you didnt let the grape skins release their tannins for a long enough period.

Wine may have to be aged for a while .

Depends on what you used for juice. Also depends on what you consider purple. If you used blackberry's, dew berries, blue berries. logan berries, or black raspberries, it could be purple especially if it was too diluted with water.
