Chilis, Applebee's, Carrows, Denny's, they all use it. Is there really any difference or is it just a ploy to make you think the bacon tastes of apples?

Apple Wood Chips are soaked, and then seem to give off a better flavor for certain meats - like bacon.
Distinctive wood smoke. Distinctive taste.

Slightly sweet but denser, fruity smoke flavor.
Beef, poultry, game birds, pork (particularly ham).

Its for flavor to impart a certain taste. If it is only briefly smoked, there may not be much flavor. Apple wood is a little milder than mesquite or hickory smoked.

My taste buds might not be the best so I usually couldn't tell you a ham tasted like apples unless there were apple rings on top of it when it baked. I can definitely tell the difference between mesquite smoke and hickory but many people don't like a strong smoke flavor anyhow.

Supposed to impart and apple tree( apple) flavor.

It's just the latest thing. Actually, not that impressive. Hickory is still the best wood for smoking bacon. Applewood is probably easier and cheaper to use.

It is mostly a marketing ploy. Any fruit-wood is excellent for smoking meat, especially pork and most especially bacon but apple-wood just sounds sexy. It does NOT make it taste of apples, just of apple-wood.
