many ways you can prepare it. I'm running out of ideas! How do you prepare your zucchini?

You could make zucchini bread. I love zucchini bread! Here's my recipe

3 eggs
1 cup olive oil
2 cups sugar
2 teaspoons vanilla
2 cups coarsely grated zucchini
1 can (8oz) crushed pineapple
3 cups all purpose flour
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon baking powder
1 1/2 teaspoon cinnamon
3/4 teaspoon nutmeg
1 cup chopped walnuts
1 cup raisins

1 Preheat oven to 350°F. In a mixer, beat eggs. Add oil, sugar, and vanilla; continue beating mixture until thick and foamy. With a spoon, stir in the zucchini and pineapple.

2 In a separate bowl, combine flour, baking soda, salt, baking powder, cinnamon, and nutmeg. A third at a time, add dry ingredients into wet and gently stir (by hand) after each addition. Add the walnuts and raisins, blend gently.

3 Divide the batter equally between 2 greased and flour-dusted 5 by 9 inch loaf pans. Bake for 1 hour or until a wooden pick inserted in to the center comes out clean. Cool in pans for 10 minutes. Turn out onto wire racks to cool thoroughly.

Makes 2 loaves.

well i have 2 recipes i will share with you...one is fried zucchini and the other is my zucchini bread...i have had both of these and they are both very yummy...my favorite is the zuchinni bread!

for fried zucchini all you do is cut up the zucchini in slices and roll the slices in beaten eggs and then dip them in cracker crumbs and fry in some oil till they brown

zuchinni bread

3 eggs
2 cups sugar
1 cup oil or marg.
3 T vanilla
3 cups flour
1 tsp cinnamon
1/4 tsp baking powder
1 tsp salt
1 tsp soda
2 cups shredded zuchinni

Yield: 2 loaves

Mix all ingred. together. Bake 1 hour at 350 degree oven.

STUFFED ZUCCHINI

4-5 small zucchini
1/2 cup bread or cracker crumbs
1 tablespoon melted butter


Stuffing:

1/4 stick butter
1 tablespoon flour or cornstarch
1/4 cup sour cream
1/2 teaspoon dill
parsley and paprika (for sprinkling)
salt and pepper, to taste
zucchini pulp

Drop whole zucchini into boiling salted (about 2 tsps salt per 5-6 quart pot) water. Reduce heat and simmer for 15 minutes or until tender.
Drain; cover zucchini with cold water to stop the cooking. When cool, slice in half lengthwise; scoop out meat from centers leaving a hollow shell. Reserve zucchini pulp and set aside.

Mash zucchini pulp using a potato masher or a fork.


Stuffing:

In a small saucepan, melt 1/4 stick butter. Blend in the cornstarch until no lumps remain; add sour cream. Combine with dill and salt and zucchini pulp, mixing ingredients until well blended.
Fill the zucchini shells evenly with the stuffing.

Melt 1 tablespoon butter in microwave. Stir in 1/2 cup crushed cracker crumbs or bread crumbs, mixing until all are coated. Sprinkle a layer of buttered bread crumbs on top. Top with parsley flakes and a sprinkling of paprika for color.

Bake in a preheated 350F oven for 30 minutes.

Pizza Zucchini Variation: Spread a thin layer of pizza sauce on top before baking. Sprinkle top with Parmesan cheese (or shredded mozzarella) 10 minutes before baking is finished. Drizzle with olive oil infused with minced garlic, oregano, and basil before serving (omit dill and sour cream).


ZUCCHINI LASAGNA

2 large zucchini
1/4 cup pastry flour, white
salt to taste
black pepper, freshly ground, to taste
oil for frying
15 oz ricotta, part-skim
1 egg white, plus 1 whole egg
1 tsp oregano
1/4 cup Parmesan, grated, divided
2 cups spaghetti sauce, divided
1/2 lb mozzarella, shredded divided

Preheat the oven to 350 degrees. Slice the zucchini lengthwise into 1/4 " slices.
Mix the flour with the salt and pepper (or alternate no-salt seasoning). Dip both sides of each of the slices into the mixture.

Heat the oil in a large, non-stick skillet. Fry the zucchini in batches over medium heat until golden, turning once.

Drain on a platter covered with a paper towel. Set aside.

Combine ricotta, egg white, whole egg, oregano and 1/2 of the Parmesan in a small bowl. Spread half of the spaghetti sauce in the bottom of a (12"x8"x2") baking pan.

Top with half the zucchini slices, half the ricotta mixture and half the mozzarella. Repeat the layers. Sprinkle with the remaining Parmesan.

Bake for 45 minutes or until bubbly. Let stand for about 10 minutes before serving.

Seafood Lasagna - layer lasagna noodles, crab meat, zucchini slices or julienne, egg/cream cheese mixture (2 eggs + one block cream cheese softened and blend with mixer), mozzarella, repeat all and bake at 350 until cheese is melted

i just make it fried. cut your zucchini into thin slices and and make a breading from flour and salt and pepper to get it stick dip it in water and fry it in a pan with very hot oil andfry it till there brown
