you can use nail caps like soft paws or soft claws...check ebay, you can get them pretty cheap. In the meantime, use a squirt bottle to spray her whenever you catch her scratching or chewing the sofa.
DO NOT DECLAW your cat!!! It is cruel and no sofa is worth the pain that your poor cat will endure. It is the equivalent of having the tips of your fingers cut off....not a good idea! No cat lover would even consider such an evil procedure.

Check with the pet store for claw covers, which make it impossible for cat to scratch anything.
Our cat is smart. She learned that if she meows before dawn (bathroom run, outside, please, not the litter box) it's an automatic one-way ticket to the cold, lonely, litter box room, AKA laundry room. Amazingly, she doesn't make a peep until she sees that we're awake.
You could do something similar with your cat. Make sure there's a verbal scold as well. You don't leave her out with the couch overnight, do you?
Would a water bottle help? We used to keep one handy so that if our pets misbehave, they get sprayed in the face with a water bottle.
I can see why you're distressed, and I wish you well in solving this problem!

Those sprays usually have an awful smell...I tried it on my sofa and nearly suffocated. I think making sure the cat is not left alone with the sofa and spraying her with a water bottle everytime she does something wrong works.

Well, I don't know if you can train her, but you can prevent her from messing with the sofa. Petco offers a spray that repels pets from chewing on this... such as electrical wire or furniture.

Tin foil - cats hate the sound of it. Cover your couch with it and your cat will eventually leave it alone (and then, hopefully, you'll be able to remove the foil and enjoy your brand new couch!)

trim her nails and mist it with bitter apple. check the fabric for colorfastness first, but trimming the nails weekly will help. If you are not sure how, ask your vet or a friend who can show you.

yeah I say scratching post also clip her nails or if you want get her declawed my gradma's cat's declawed because she did the same thing but she also attacked my gradpa.(she's feral.)
