Ever heard of "Hobo Burgers". Back in the 20's and 30's the homeless and jobless were called Hobo's. That was the great depression. I've changed the recipe slightly to suit my taste and the hygiene back then left a bit to be desired.so I wash my hands frequently when cooking. Anyway here it is. Feeds 4 people if you are frugal. 1 pound of ground chuck...1 large onion..2 or 3 carrots. and 2 large potatoes. Form the chuck into 4 proportionate patties and place on a piece of aluminum foil....1 for each burger. Peel and slice the onion into 1/4" pieces and place 1 slice on top of the meat. Peel and slice the potatoes and cut them into 1/4" slices also and spread them evenly on all the burgers. Peel and slice the carrots and also place them on the burgers. Salt and pepper.

I'm going to tell you the secret to shopping on a tight budget. . . first, don't use coupons. They are usually a rip off. Second, if there is a mexican market you can shop in go there. The meat and produce is the same stuff you get at any of the big name markets but it costs so much less. I'm half mexican and used to go shopping with my grandmother and I was always amazed that she could come away with six bags of groceries and only spen a portion of what I would spend at one of the other places and I only came home with two or three bags of groceries. Also invest in a crock pot. Meat tastes better and if you need to buy a lesser cut of meat it will come out tender and very tastie.

Ham and Broccoli Strata
INGREDIENTS
* 2 (10 ounce) packages frozen chopped broccoli, thawed and drained
* 3/4 pound thinly sliced deli ham, cut into 1/2 inch strips
* 2 cups shredded Swiss cheese
* 1 (8 ounce) loaf French bread, cut into 1 inch slices
* 6 eggs, lightly beaten
* 2 cups milk
* 3 tablespoons dried minced onion
* 3 tablespoons Dijon mustard
* 1/2 teaspoon hot pepper sauce
* 1/2 teaspoon paprika
DIRECTIONS
1. Combine broccoli, ham and cheese; spread half into a greased 13-in. x 9-in. x 2-in. baking dish. Arrange bread slices on top. Cover with remaining broccoli mixture. In a bowl, combine the eggs, milk, onion, mustard and hot pepper sauce. Pour over broccoli mixture. Sprinkle with paprika. Cover and refrigerate overnight.
2. Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350 degrees F for 35-40 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes before serving.

You're on a budget, so I'll not be too fancy, though you can make it seem fancy if you have to serve more than just yourself. :-)
Black olives, canned.
Diced tomatoes, canned.
Diced mushrooms, canned.
Angel hair pasta (in spaghetti aisle, much cheaper than spaghetti, much more in the box too.)
Spinach, canned.
Sweet potatoes, canned.
Cinnamon.
Pepper.
Skinless boneless chicken breast in a large frozen bag.
Green beans, canned.
With the above listed ingredients, you can creatively figure out several meals that are healthy and cheap.
For breakfast:
Raisin bran.
Milk or soy milk.
All of this is inexpensive no matter what store you go to, but try for a Savealot or Aldi's so you can get it for even less.

Open face bean and bacon sandwiches.
You need:
Whole Wheat Bread
Mayonnaise
Bacon, chop up the slices
A can of baked beans - I like Bush's barbecue baked beans.
Onions, diced
Cheese (optional. I like sharp cheddar for this)
Preheat oven to 450 degrees Fahrenheit.
Toast bread very lightly. Smear a very thin layer of mayo on each slice.
Fry bacon. Remove bacon from pan and drain in paper towels. Pour off part, but not all, of the bacon grease.
While the pan is still hot, saute the diced onions in the bacon grease for a couple minutes.
Put bacon on the bread. Then put beans on top of the bacon. Finally, put the onions on top of the beans. Bake in the oven for 8 minutes.
At this point, you can eat it or put cheese on top and bake for another 2 minutes. It's good either way.
Also, beer bread is cheap, easy, and delicious. There's a video about it below.

Buying these basics is quite cheap and can be used to make filling meals:
Ground beef
bag of potatoes
boxed macaroni and cheese
bush's baked beans
boxed cake mix (add 2 eggs and a stick of butter to make cookies)
eggs
head of lettuce
canned veggies
chicken
bread
hot dogs
crackers
soup
milk
Brown the ground beef. drain. make mac and cheese according to the direction. Add the beef and mix. Makes a good and cheap main course. Have with salad or veggie.
or make hot dogs with baked beans
how about chiken and a baked potato with salad
french toast and scrambled eggs and hash browns

healthy and econimical this is a good site for both
1-1/2 lb. extra lean ground beef or lean ground turkey
1/4 cup KRAFT Mayo Light Mayonnaise, divided
1 pkg. (1-1/4 oz.) TACO BELL® HOME ORIGINALS® Taco Seasoning Mix
1/2 cup KRAFT Natural 2% Milk Reduced Fat Colby & Monterey Jack Cheese Crumbles
1/4 cup TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa, divided
6 lettuce leaves
6 slices tomato
6 whole wheat hamburger buns, split
PREHEAT greased grill to medium-high heat. Mix meat, 3 Tbsp. of the mayo and the seasoning mix; shape into 12 thin patties. Combine cheese and 2 Tbsp. of the salsa; spoon over 6 of the patties. Cover each with one of the remaining patties; pinch edges together to seal.
GRILL 7 min. on each side or until cooked through (160ºF). Meanwhile, combine remaining 2 Tbsp. salsa and remaining 1 Tbsp. mayo.
PLACE lettuce, tomatoes and burgers on bottom halves of buns; top with salsa mixture. Cover with tops of buns.

1 tbsp olive oil
500g beef braising steak, cut into chunks
1 onion, roughly chopped
250g pack oyster mushrooms, sliced if large
1 tbsp tomato paste
1 tbsp flour
100ml red wine
200ml hot beef stock, from a cube
350g potatoes, peeled
25g butter, chopped into small pieces
Heat oil in a non-stick pan over a high heat. Add beef and cook for 10 mins until browned all over, then remove from pan. Cook onion for 7 mins until softened. Stir through mushrooms, then cook for 3 mins more until golden. Stir in tomato paste and flour and cook for 1 min more. Pour in wine and beef stock, bring to a simmer. Add beef back to pan. Cook, uncovered, over a gentle heat for around 2 hrs until meat is really tender, topping up with water if needed. Pour mixture into a 2 litre baking dish.
Heat oven to 190C/fan 170C/gas 5 and bring a pan of lightly salted water to the boil. Cook the potatoes for 10 mins until beginning to soften. Cool under a running tap, then coarsely grate. Sprinkle over the beef and dot with butter. Pop in the oven and cook for 30 mins until the crust is nice and crispy.
Making it vegetarian
For a vegetarian version, use red peppers, grilled courgettes and some SunBlush tomatoes instead of the beef.
