Do they stop and pee or do it on their bike etc.?

Sometimes they stop. Though with all the engery they expend they have less of a need for stops than you might think.

it depends on how the race is developing.
if the riders can afford it, they pull off and go on the side of the road.

not to be gross, but there was a dude on gerolstiner about 5 years ago that had some serious stomach cramps/diarrhea.
he ended up going #2 while riding. usually the camera man catches on, but he is shown crossing the line from the backside with a nasty package.

While during the race? i take it. They do it early on in the stage when the pace is still slow. They get to the back of the peleton, pull over on the side of the rode, find a tree and do their business. Then they race back into the peleton.

they pull their shorts to the side and let it go.
in the old days this was not such an issue but now that the the race is so fast ...... who can afford to get off the bike?

they take nature breaks on the side. Levi had to take a nature breake today with only 18miles left. his whole team had to work to get him back on the peloton.

I think Forest Gump put it best...When I had to go, I went.

Although, I'd have to say, they lose so much water to sweat that they propbably don't have to urinate too often.
